Last night i made an apple chicken coconut curry. I loaded it with lots of green veges - I thought it was tasty but Gary said don't make it again :(2

Last week was my birthday and we just stayed home because Gary didn't feel well - so i made desert
it was too hard working out a low sugar base so we just had a crustless cheesecake
i used a weight watchers jelly - my unbaked cheesecake recepie uses a packet jelly (jello) instead of gilliten so it also doesn't have extra added sugar - just fruit

I've gained 10 pounds in one week, and this... THIS is to blame. German chocolate cake I made my fiance. I'm eating well, too well. Next is a pantry clean out, waste not!

Stuffed zucchini! The zucchinis are huge. This is a cookie sheet they are on (half sheet size). Each half is dinner for two so this picture was dinner for two nights. Each serving is 270 calories. Delicious! DH asked me to make another. Stuffed with ground beef, ground turkey breast, basmati rice, onions, garlic, and spices. Topped with cherry tomatoes and apple cider vinegar.

I think when they grow to that size they become a marrow
Im quite partial to a tasty stuffed marrow

True! The local gardening group calls them marrows also. Absolutely delicious. I got several for $1 each when I went east of the mountains. Most people refuse to buy them so they go for low prices and the farmers are glad to see them go.

Slugs got all my plants too. So frustrating!

I haven't tried the flowers, but have wanted to. The smaller and larger zucchinis are great. Each has yummy things you can do.

Ive never had any luck growing them
I have never even tried a stuffed flower.
One thing im hoping for is my elder flowers this year so i can make a fritta

I bought hubby a mushroom kit for pink oyster mushrooms because pink is his favorite color! They were delicious cooked with a bit of butter!

So im eatting the food of my ancestors

I make my porrage just with water - no sugar or salt and i usually eat it with milk and banana with a sprinkle of coconut

Rosh Hashanah dinner!

Brisket smoked at 300 degrees with pecan wood for 2 1/2 hours then slow braised in a bottle of dark red wine and some homemade beef stock for 9 hours. Served with mashed cauliflower and orange glazed carrots made with homemade dehydrated orange slices.

The challah is a saffron honey challah rolled into strips that get filled with apples, cinnamon, and honey. Kneaded homemade raisins into the dough this year too. Stands 8" in the center. Baked on 1/2 sheet pan.

Up until I mangled my finger in early August my diet had been pretty good, I was weighing around 160-165lb (I thought I was 180lb LOL). Since being off work I have been eating a lot more and have gone up to about 175lb.

Funny thing is I thought I was around 180lb while working and guessed I had gone up to 190lb when I went into the clinic for my follow up surgery on Wednesday. When I jumped on the scales and saw 175lb I was quite surprised and realised I must have been a lot lighter than I thought I was when I was working.

I bought house made brisket from Whole Foods and they supplied me round brioche that looks like round challah I saw on pictures. Will cook everything else myself, already started. Thank you for sharing!

French toast made from that challah I posted earlier! The pockets of fresh apples and homemade raisins make for an amazing French toast. Topped with homemade applesauce made from the last of the apples I bought straight from the orchard. IMG_20200920_120254699.jpg

Our dinner yesterday. Dates, assorted olives, steamed carrots, beets and green beans salad, baked baby halibut under yogurt/mustard coat with baked head of garlic, fake challah (brioche), house made pastrami from Whole Foods, baked blackeye peas with tomatoes, leeks and additional heads of garlic. Stuffed acorn squash.

I’ve lost about 7-8 lbs in the past month by eating less carbs with dh.We have been mainly substituting quinoa for rice and spaghetti squash for pasta. In these pictures: chicken tikka masala and brussel sprouts cooked with bacon (over quinoa). Second picture is my famous spicy jalapeño Pork chops and to balance out some of the fattier meals we have been having, lunch was a smoothie. All homemade.

Yum. Your spicy jalapeño pork chops look particularly delicious. They kinda remind of salt and pepper pork chops.

Went out with Lil Sis today for a nice lunch. We're slowly reverting to a Covid Normal so it was really nice to go out together just like old times (but with lots of social distancing and hand sanitizers).
