How are you eating during the virus lockdown?

Made flat bread
a bit of disappointment
As baking powder is out of stock i brought cream of tarta to use with baking soda but i used too much snd
the flat breads were thick and doughy
ive desided bread making is not an ecconimical way to survive the lock down when a nice multi grain loaf is only $2 from the shop
my lock down loaf was good but we ate it up in one day
At least with cakes and biscuits they last a couple of days and although full of butter and sugar must be not as bad as brought ones

Aww I am sorry @Daisys and Diamonds but at least your lock down loaf turned out deliciously and maybe second times the charm? Good luck and don't feel bad and hope you can find the ingredients you need on your next shopping trip.
 
I haven't been out of the other thread in weeks (months?) and am thrilled to find this conversation! DH and I have both been sick since the middle of February. Between February 12/13 (give or take a day or so), I have been to a grocery store twice and had two grocery deliveries. We get a weekly produce box that has gotten less selection, quantity limits, and late/missed delivery with the increased demand. I added delivery from a local dairy farm a few weeks ago so we get fresh eggs, butter, and heavy cream delivered every week now. The dairy farm also has some items from local bakeries, fresh juices, coffee, and a few random other things.

I have definitely gained weight. Being super sick and stuck barely able to manage cooking a couple of meals a day has not helped! My biggest issue that way is that I have been too tired to eat the 4-5 meals per day my body needs to lose weight. I gain weight with any fewer meals so eating twice per day has not been good for me. I am also having to cook what food we have (or is available in the normal delivery service since grocery delivery has been near impossible for awhile now) and that I have energy to prepare. Okay, and a little bit of stress eating such as the chocolate coconut bread pudding I made for brunch the other day...

Meals today (definitely not great, but super low effort and that is what I needed today)
Matzo brei with turkey sausage and a tangelo.
Handmade matzo (not made by me!) with peanut butter.
Shredded chicken (from making soup) with BBQ sauce over tortilla chips.

Holy crap. I just made the tastiest breaded chicken today. I bought a whole chicken; otherwise, I would never bother with chicken breasts. They’re so dry and bland.

To make them palatable, I dry-brined them with salt and sugar, then sous vide at 140 for one hour. After that, they were coated in freshly microplaned Parmesan, dipped in egg, and coated with pork panko. I gave them a quick fry in some duck fat and VOILA! Flavorful, moist chicken breast!

(PS - Do not cut up a whole chicken when drunk or you’ll get weird, uneven pieces like these.)

Making rice pudding in slow cooker now! Steaks are marinating, brussels, peppers, onions are chopped and ready to be grilled and salads are made. Tuna salad with celery and onions are made for tomorrow's lunch to go into pepper halves! It's too cold to walk so I decided to cook and chop and toss in slow cooker :kiss2:

Oh super yum. My Mom made the best rice pudding (custard on top) but I havn't eaten it since I let home (don't eat a lot rice). I think I'll revisit that gorgeous recipe. Thanks for the boost!

Did I understand you correctly in hearing your food intolerance is to mung bean thread vermicelli? Never heard of anyone getting sensitive to that before. Are there specific compounds causing intolerance?

Yup mung bean thread vermicelli. Not the rice vermicelli. That is fine!

I feel like vomiting after I eat it! But I love it!!!

Have felt this way since I was a child. I remember when I was about 5 I ate a bowl of it for breakfast and then walked up school. I didn't get to school and felt nauseous so had to turn home.

No one else I know feels like that. I once cooked a chicken noodle soup using is for all my friends and by the end of the meal I was slumped on the couch despite being the hostess!

I've had it in Thai salad, noodle soup, stir fried. Always feel varying degrees if nausea afterwards.

I'll be up and running soon enough. I'm used to it!

No milk
$160 and nothing i can make dinner out of that i don't already have
Im so angry im going to give his exspensive brand tuna to the cats because he didn't buy cat food

My weekly veggie box came today. I'm glad I ordered different things than I necessarily wanted in case they were out of stuff. I got less than half of the produce I ordered. We aren't depending on this to eat, but it sure is nice to have some fresh to add in to the meals.

It's bizzare that a solid, upstanding, kind hearted fellow with sound morals like my husband cannot be trusted to go to the supermarket for 5 tomatoes and watermelon.

I would never ever ever ever send him based on past experiences. He just gets creative and "clever" when left on his own at the shops. I don't know what takes over him.

ETA: Once he accidentally bought me 10kg of sticky rice. I was on the phone with him at work. Something along the lines of:

Why would you do this to me. I thought we were happy together. Why 10kg of unreturnable sticky rice. Why babe? Why????

I am a bit of a drama queen.

We did eat all 10kg of sticky rice in the end after about 1.5 years.

and when this is over im going to buy some pine nuts and make pesto with the basil ive frozen from the garden

I'm really cheap. Too cheap for pinenuts.

I use almonds, cashews, pistachio. All the cheap nuts I get from Costco for them to snack on.

Ive never had anything but pine nut pesto - if i could i would happily eat $20 worth of pine nuts on the way home

@Arcadian I have looked and just cannot find the chard soup recipe anywhere. It was such a great recipe too-chicken sausage, chard(I used both the leaves and the stalks, but the recipe was just for the leaves), kalamata olives, tomato, broth, white wine, garlic, onion, topped with feta cheese. I am sure there were other ingredients too as I haven't had chard to use up in some time.

Another quick way to use Chard up is with pasta...
Cut Chard ribs into 1/2-1 inch pieces and blanch in lightly salted water for 3 minutes
Melt 1/4 cup butter in a sauce pan on medium heat
Add drained, blanched chard ribs and simmer 4 minutes
Add 1 cup cream and cook until cream reduces by 2/3's
Mix with pasta of choice and season-salt, pepper, garlic
This goes great with Chicken :)
 
I’ve decided dessert is the perfect breakfast food-this week was triple chocolate cake and last week was blueberry cheesecake, at least they were both no added sugar :lol-2:

My waistline will appreciate me being able to leave the house again-I love to bake and have been
finding too many recipes I NEED to make ;)2

Thank you for looking! Today or tomorrow we're visitng another farm for another box. We're eating a lot more veggies at the moment (which is of course a very good thing!) And a few farms now have 10 dollar boxes. If I had the room to can I totally would!

Oh my goodness that looks heavenly. You love to bake and I love to eat what you bake. And though I cannot enjoy in person what you are baking I am very much enjoying it vicariously and thank you for sharing this with us. :love:
 
@missy I have had many food allergies/sensitives since I was born so have had to always adapt or make up my own recipes. Currently we are doing a food challenge with cow dairy or else I could only eat sheep or goat dairy in small amounts. Also both of those dessert were made with almond flour, duck eggs and no sugar. I love coming up with new recipes that only include the items my body is currently able to handle(which changes on a regular basis), so is always an interesting challenge :)

What is with men getting clever when they shop?! I ask Bruce to pick up one thing. He comes home with 5 or 6. What should have been a $10 trip is somehow a $100 trip. Usually with stuff we almost never use or stuff we already had but he found a small container for double what I buy a large one for. He usually comes home with what he was supposed to get, but I have to be really desperate to send him. This was one of my huge frustrations while down with my herniated disc. It is actually why I first tried grocery delivery. An extra $10 in tip for someone else to shop is way cheaper than sending him to the store...
 
Mine doesn’t look at the produce or check expiration dates. Last trip he came home with 3 gallons of milk that expired in 2 days, 2 bags of spinach that had already gone bad that went straight to the trash, and a bunch of grapes that were covered in a mystery red syrup.

Dont give up. It’s possible. My dh is an excellent shopper but that’s with all myhard work training him. Lol
