My DH puts avocado oil on them and roasts them slowly on the grill (either directly on a cookie sheet on the grill or in a pan on the grill) so they melt in your mouth. And they do. Yummm. I wish I had a pic of them when he’s grilling them. Hope that makes it more inviting for your kids. I really love them grilled. So tasty.

Arcadian, you brussels sound yummy. I just roast mine after tossing in coconut oil or lard, with ground pepper and sea salt (and sometimes some bacon). But the addition of goat cheese and BV sounds interesting!

Tonight is smoked cauliflower with onion and garlic. Plus some smoked corn on the cob (rubbed in ancho powder and drizzled with lime juice) and some smoked beef tri tip.
I take it you have a smoker! I didn't realize people smoked anything besides meat in those things. Interesting, and I'd like to try smoking veggies someday.
ETA: I just ate a giant salad. At 10:30 pm. 'twas all I had time for today! Gonna get through those 82 bottles of impulsively purchased salad dressings one of these days...
I like to do brussell sprouts with non virgin olive oil , cracked pepper, lemon, garlic. I generally marinate these for 2-4 hours before cooking, then put them on the grill in a brill basket... OMG so good Then I use crumbles of goat cheese on top with a wee bit of balsamic vinegar (even better!!!)

Sounds delicious @Arcadian. I cannot do dairy (or soy so that leaves out many cheese substitutes too) and I miss cheese so much though it has been at least a decade I have been on a dairy limited diet I have been dairy free for about 6 months now and it is challenging. But I am living vicariously through others so bon appetit. Sounds yummy.
Oh and I have been adding Apple Cider Vinegar (with the Mother) to all my salads and it is delicious and good for us too. Just an aside as you mentioned balsamic vinegar and I find that Apple Cider Vinegar is a nice change.
I love smoking veggies! This week alone has been cauliflower, brussel sprouts, artichokes, fennel, carrots, and corn. Tomatoes, zucchini, eggplant, peaches, beets, and so many other delicious things to smoke! Oh! Peppers are amazing smoked!

This evening there were smoked, dried peppers in my pot of lentils & grilled plant matter & wild fennel & salted cod. Smoked peppers are an Institution! Of course.
