What''s for dinner tonight?

I always envy those who can cook, I just don''t have the knack for it. We eat out or get take out every night!

All you ladies have some fantastic recipes/menus going on!

Last night''s menu:

FI: porterhouse steak with black pepper sauce, braised spinach, baked sweet potatoes and a side salad.

I had chicken rice and braised spinach. (i don''t like steak much) And home made sticky date pudding with caramel sauce for dessert!

Tonight''s menu:

FI: Chicken and vegetable stir fry with steamed rice

I am having a healthy chicken salad.

My FI and I are eating diff foods cos I am on a diet and he''s blissfully happy eating whatever I cook for him LOL (though i try to minimise fat in my cooking)
 
Last night we ended up having broccoli instead of spinach, so tonight we''re having broiled salmon with spinach and quinoa.
 
Last night we had herbed chicken with carrots and steamed green beans, sweet peppers and onions.

I think I''m going to try the leftovers with some curry action tonight.
 
We bought some shrimp to grill for tonight.

Anyone have a good marinade recipe for grilled shrimp?
 
Shrimp are hard to marinate because if it is too acidic or they sit for too long you'll end up with ceviche (mmmm ceviche!) I usually just brush mine with garlic and butter and then serve with a spritz of lemon. I've heard that Old Bay is a great seasoning on shrimp as well.

We bought some shrimp to grill for tonight.

I use a recipe from one of my favorite cookbooks, Giada''s Family Dinners. It''s called pepperoncini shrimp. First you make the pepperoncini oil (this makes more oil than you need for this recipe, but I like it on other fish dishes so I make it all):
1/3 cup olive oil
1/4 cup chopped pepperoncini
1T minced garlic
Salt and freshly ground black pepper

You saute the pepperoncini and garlic in the oil for about 2 minutes and then season to taste with the salt and pepper.

You then marinate your shrimp (this recipe calls for 48 large peeled and devined shrimp) in some of the oil and per the recipe saute the shirimp. I actually prefer throwing the shrimp on skewers and grilling them. Once done, you toss the shrimp in the reserved oil (I tend to drizzle rather than toss).

It''s very yummy!

Tonight was steamed snow crab legs seasoned with old bay, green beans almondine, and baked potato.
Dessert was red velvet cake.

The peanut butter M&Ms are mucho delicioso too, though...mmmm....the UK needs more M&Ms.

Tonight is:

Thickly cut pork chops, grilled. Anyone have anything exciting to marinate/rub them with?

Grilled veggies: red, orange, and yellow peppers, zucchini, yellow squash, mushrooms (maybe), and cherry tomatoes.

Oh that sounds yummy Ellen. Grilled veggies are great. I do almost the same thing. No mushrooms though but I add sweet vidalia onion slivers. Never actually done pork so I''m not sure about that.

I have never done mushrooms with them, but I had them, hence the "maybe". However, I have Vidalias, didn''t even think about them, thanks for reminding me! I''ll chuck the shrooms for those.

You should try pork on the grill, it''s delicioso!

I''ll have to try it. I love to grill. I like pork but for some reason, it just gets overlooked when I plan on grilling. I''ll sometimes do a peppered pork tenderloin in a crockpot with veggies... oh so yummy!

The Vidalia will seem to disappear when grilled so a little more than what appears balanced should work out right.

Enjoy! I''m not sure what I''m doing yet. Supposed to be raining I think.

think tuna sashimi only lightly tempura fried with a sauce similiar to soy sauce and sriracha... alittle spicy but absolutely amazing..

I'm making this right now in the crockpot for dinner. Made some modifications but the recipe was originally from allrecipes.com

Beef and Eggplant Stew
SERVES 4
• 1 lbs lean stewing beef, cut in 1½ inch chunks
• 2 medium onions, sliced thin
• 4 garlic cloves, minced
• 4 tablespoon olive oil
• 1 large eggplant
• 2 stalks celery
• 1 cup beef stock
• 1 (1 lb) can tomato sauce
• ¼ teaspoon sugar
• ½ teaspoon cinnamon
• 1/8 teaspoon garam masala
• 1/8 teaspoon ground cloves

1. Wash the eggplant and cut into 1 inch thick segments.
2. In large skillet, brown the beef, onions, garlic and eggplant in olive oil until dark golden-brown.
3. Place in crock pot.
4. Combine the beef stock with the tomato sauce, sugar, spices, and salt and pepper to taste, and stir it into the meat.
5. Cover and cook on low heat for 8-10 hours.
6. Serve with pasta or rice.
