i haven't read through the 50+ pages of this thread so I apologize if this was already discussed....

has anyone started baking sourdough during these wfh/quarantine times? i am late to the party.

after a few attempts i can either get the sour flavor or the rise but not both at the same time. would appreciate tips, tricks, or recipes that have worked for you.

- dear UK peeps i hope you don't have to suffer the toilet paper/ flour/ nnocence again this time around
i sure wish i had had this bottle of dried yeast durring our lock down :angryfire: (i would have been happy just to get baking powder)
So im determined not to waste it

Anyway i found this recepie on line
im sure UK crumpets must be exactly the same as NZ/ 'Oz crumpets

check these out !
Not as many holes as store brought but the butter still soaked in
And they tasted just like brought ones !
They only made 5
I ate the misshapen one
Going to toast the other 4 tomorrow
a lot smaller than a bought one
we would nornally have 3 each for breakfast (4 each if the manufacturer is doing 8 packs)

I didn't have egg or crumpet rings (who knew they are a thing?!) So we will be eatting a lot of timned pinnaple the next couple of days

last night we surcomed to the luir of the icecrream van like rats to the pied pipper

(FYI they did have 2 non dairy options)
Its been maybe 4 years since we last had a Mr Whippy
She stopped right opposite our house where a family lives
Holy cow it would be exspensive to treat a family every week

anyway Tuesday night is Wanganui east day
She was quite friendly and told me her best sales figures are actually in the winter
Its her full time job so she's all year around
we had choc dipped with nuts and a flake
so thick like a crust :kiss2: :rodent:
Its hard to see the flake - im happy to say it was not a half either =)2
she uses the flake to anchor the soft serve into the cone. A nice creamy vinnila ice cream

Just a regular cone because it would have been another dollar each for a waffle cone but they were nice and fresh - as was the flake

How are you good peeps going who are in Lock down?
Is flour and yeast and other baking supplies holding out ?

I brought a bottle of dryed yeast in December
Lock down would have been a lot eaiser with yeast (or baking powder)

Last night i made crumpets for breakfast this morning then tried out an apple chillie recepie (yum-oh)
For lunch we had chicken soup but i didnt start the bead in time and it took ages to rise (twice)
So we are having some now, after tea
It was a coconut milk bread (no coconut flavour) but i didn't have any coconut milk only coconut cream so i just left the oil/butter out of the recepie and diluted the cream a bit with water
You boiled the milk then added a cup of oats
It was a very mucky recepie with a mucky rise, but rise it did

@AllAboardTheBlingTrain - if you're making keto ice cream, I'd love it if you added some photos here of anything you're doing!

Sure! I never take pictures of my cooking or anything usually but when I make a keto dish again I’ll post pics, especially dessert. I made quite a lot of ice cream about ten days ago so I’m stocked up. But whatever I make again I can post :)

This is a pic posted early in the thread of keto ice cream that I make as a staple for the hubs, I am currently off dairy so this weeks keto ice cream was dairy-free. Are you on a keto diet?

This is a pic posted early in the thread of keto ice cream that I make as a staple for the hubs, I am currently off dairy so this weeks keto ice cream was dairy-free. Are you on a keto diet?

I am! And I also prefer to keep dairy to a minimum due to my Crohn's disease. All recipes welcome!!

Also, what keto sweeteners are you able to tolerate? I will only use monk fruit/luo han guo, erythritol, stevia or allulose.

I love baking and keto baked goods turn out so well 98% of the time, my hubby challenges me often to recreate regular recipes into a keto version and I love it.

I sure can, @stepcutnut! I use Swerve, which is erythritol. Super easy to cook with and tastes very like powdered sugar.

Once i was eatting an orange ice block (popsicle) while leaning over a stool reading something kind of upside down
and orange came out my nose !

I got into baking during the pandemic, simple breads, cruffins, bagels, etc them gained 20lbs. Now I'm on intermittent fasting and started doing yoga trying to lose the weight before I have to rejoin the society...

Looking back i think we are reasonably well durring the pandemic (well lovkdown was a bit tricky)

We didn't snack or eat between means, cut out booze and takeaways for budgetary reasons
I went down a size believe it or not
From just sitting on my behind !

But now a year latter fruit is so much more affordable ive noticed, so it makes me a bit mad that our duopoly of supermarkets in NZ were perhaps engaging in profiteering during the pandemic
