Pretty easy to get low-set studs. Choose a basket setting and move up to the next largest stock size. With a larger diameter setting, the setter can place the stone lower and then shave down the excess metal on the tips of the prongs.
I imagine that your .75ct diamonds are about 5.8mm in diameter, correct? If so, go with the 6mm 4-prong baskets from Stuller, or maybe even the 6.5mm. Ask whatever bench you're going to use for their opinion on which would be the best. Tell them you want the diamonds set as low as possible, with the culet resting just above the back plate.
They were special order and expensive because they were a designer brand! The standard ones could not be set as low. I would look through Stuller and see if there are any low baskets because most jewelers can order from them and the prices are very reasonable! If you find some, post here and I'll tell you whether they are really low or not.

I've had a look through the Stuller settings and can't see any particularly low ones as pictured in the catalogue, however I will ask a jeweller about TreeScientist's recommendation of buying a larger size in order to be able to set the diamond low. My fiancee and I just purchased a pair of studs and she also wanted them set as low as possible. They're 1.10 ctw, with each stone being about 5.25mm in diameter. We showed the vendor the setting we liked (6 prong basket linked below) and asked them to move up to the next largest stock size and mount the stones as low as possible. They said "Sure, no problem" and mounted the stones in the 5.5mm settings. They turned out perfectly. The culets are maybe .2 to .3mm above the back plate, which is about as low as you can possibly get them. So I'm sure the jeweler you're working with can find something that will work for you as well.

Stuller will be less expensive for sure. If you're working with a vendor, see if they can check Adwar Castings to see if they have anything similar. Adwar used to have an open site now it's only for trade. :-/
