Burrata is Southern, but available pretty much anywhere in Italy.

Hm. Stracchino is less salty and all creamy/buttery in texture (it doesn''t have the "filled" effect of burrata). I don''t like it, but I''m not a great cheese gourmet.

(I wonder if this goes under pearls or man-created gems???
