Is there a particular solitaire that really looks great with a 5 stone? Or do I just stick with the original crossed band and wear in separate hands (although I would like to free up the right hand for my other rings). Do you think a bigger diamond will still look good with it (1.60 - 1.80)?

I have cropped because I am in dire need of a manicure!
 
My personal thought is the crossed band is too busy. I would change that setting to a coloured stone, perhaps even change the head to suit an oval shape and wear as a RHR.
If you’re getting a lovely new diamond I would set as a solitaire and match the shoulder diamond size to the diamonds in the eternity band. I’d just do 3 or 4 each side of the diamond with the band the same width as the eternity ring.
 
Would a pave (something like the pave vatche caroline or swan) look ok with the 5 stone or is that too much? I kind of like the idea of pave because then the Ering would still have some extra sparkle if I wore the 5 stone on the right hand sometimes. Also I am worried a plain band will seem "boring" after such a the original ring with a lot going on!

And yes I love the idea of setting a colored stone in the original!
 
Everyone has a different ring style, for me personally, the current look is a bit busy and the eye drifts more toward the band vs the engagement ring. But! I have friends who also have 5 stone bands as wedding rings and they love it, so each to their own. If you were to keep your 5 stone as a wedding band, I would get a classic and slightly thicker solitaire to balance the presence of the band. I would not do pave, unless you plan on matching the ring with a new band and wearing the five stone on the right hand.
 
The 5-stone is a classic design, that will work well with almost any straight shank engagement style, diamond sides or all metal. I agree with what Bron357 said - I'd put a sapphire or other colored stone in the X ring, and wear it as a RHR.
If you're planning for a 1.5-1.8ct center, maybe a nice classic 3mm shank cathedral would look gorgeous with the band.

I found a picture of that and it looked amazing, but the center diamond on the Ering was 3.5 carats. Not sure a 1.60 or even 1.80/ 2 carat would pop or just get lost in the sea of diamonds?

A three stone on its own will look great. A three stone and a five stone will be very busy.
You are definitely looking more at a sea of diamonds if you keep the five stone as your main wedding band. If you want more distinction between the rings - keep them on separate hands. ;)

You would be surprised at the number of solitaire converts here on PS :) and, since you're going up in size you might just love it.

Has anyone seen the Vatche Caroline or Swan in pave? Are the diamonds big enough to really sparkle and have fire? Maybe I could do a solitaire style with a little something extra and keep the 5 stone on my right.

Alternatively, I could do a plain solitaire paired with the 5 stone....what is a straight shank that Winks Elf referred to? Just a band that is not split or crossed? Would the plain Vatche Swan, Caroline or U 113 look good?
