What''s for dinner tonight?

This is embarrassing, but we''re grilling again, and it''s the same meal that I posted in this thread last time, except this time I''m only eating spaghetti squash and no chicken. I *really* love spaghetti squash and asparagus.
 
Oh, and we''re eating leftovers of my Chicken and Corn Poblano Casserole from last night.

I want some more of the pork tenderloin marinated and basted with a ketchup/balsamic/orange juice and zest/s&p/garlic/ginger sauce that we grilled the other night, along with some grilled corn on the cob slathered with queso fresco, sprinkled with chili powder, salt, and pepper and topped with some fresh cilantro. That was a GOOD dinner!

I''m with you, Haven! I''ve become terribly addicted to spaghetti squash this season.
 
I got my hair done tonight so home later than usual....

I know, not healthy, but I really like them with cheese melted...even more not healthy.

Hudson Hawk--I saw you ate cereal one night for dinner....sigh....I''m so jealous....before I was married I could eat cereal for dinner anytime I wanted. DH isn''t quite as thrilled about cereal as I am....

OMG DH would eat cereal for every meal if I let him! LOL...I''m just excited and eating more cereal than usual because Chex is now gluten free and I love me some corn chex. So any excuse to eat it...
 
tonight was this delicious atlantic organic salmon that's sold at the local fish shop which is about a 5 minute walk from my house :D we had steamed asparagus and broccoli and some glazed carrots. it was YUM!

honestly, lauren, i''ve never tasted salmon this good - and the salmon in australia is extraordinary! but this is better. incredibly tasty and juicy and beautifully grained throughout - thick, juicy slices dredged in lemon juice that makes the salmon juice pool in the bottom of the alfoil for the best ever self saucing effect imaginable!

i have one fillet and just want to go back for another, and another...

we have it at least once a week and it''s the highlight of my week''s dinner''s. i always buy myself a second fillet as well, and have it for breakfast during the week too. :)

We were very late this evening (after 9pm), so we had Marie Callendar''s Turkey and Dressing frozen dinners. If you haven''t had one, let me just say, it''s the best little mini Thanksgiving dinner in the world! And surprisingly low in calories.
 
BF and i have been on a health kick so tonight, i just made some whole wheat pasta with pesto sauce and organic ground turkey. i also made a salad with radicchio, romaine, english cucumbers, avocado and slivered almonds with a balsamic vinaigrette. nom nom nom nom!
 
It''s grilled burgers and whatever veggies we have lying around for us, tonight.
Mmmm, burgers . . . nom nom nom . . .

btw, i was talking to one of my customers about a sushi joint i recommended, and i was raving about their spicy tuna rolls. i thought about you and thought to myself, "poor steph has to wait 5 and 1/2 more months"!

I have to admit I''m pretty happy with my dinner from tonight, mainly
because I tried something different (and it worked, lol).

We had marinated free range chicken breast, with ratatouille (stewed Mediterranean veggies)
and creamy yummy polenta.

I couldn''t believe this is the first time I had polenta?! It''s soo nice, I''ll be sure to use
it in future.

Last night, Fi cooked and although it was simple it was really yummy and fresh - crumbed baked fish fillets, with green beans and carrots plus a crunchy fresh salad of baby cos lettuce, grape tomatoes, Lebanese cucumber and red capsicum - yum!
Fi makes a killer salad dressing, I could eat those salads every day, lol !

I have a stoopid sweet tooth and usually have dessert (I know - bad!). Tonight is
one of my faves - fig jam, honeycomb and caramel gourmet icecream.
Fi usually has to pry the container from me, ha ha !

Aww, thanks for thinking about me....I just can''t stand it, but I think I will go for some vegetarian sushi just to sort of get my fix!

I pulled chicken out to thaw to cook for the sick puplet, but now that he''s got food from the vet and seems to be feeling better, I''m going to get DH to grill it. It poured all morning but is beautiful now. Perfect grilling weather. I have some chimichurri I made last week that goes so well on grilled chicken. Yum!
 
I don''t plan to cook. Let them fend for themselves. The cats will get chilled canned cat food (if they''re good)! (We''re going to a movie, so bet is we''ll end up eating hot dogs!

I had leftovers from the "Mediterranean" veggie mix I made for yesterday''s lunch wraps (diced cucumber, grilled chicken, tomato, olives, red onion, and bell pepper mixed with feta, a smidge of low fat Italian salad dressing and EVOO, salt, and pepper). So, for last night''s dinner, DH added some broccoli and mixed it with whole wheat pasta... YUM! It was veggie-heavy (so very filling and fresh tasting) and delicious.


We have some leftover coleslaw we need to get rid of, so tonight we''re having breaded tilapia filets, cole slaw, and whatever veggie DH grabs from the fridge.

Ugh! Neither can I. That''s why I always make baked ziti--it tastes just as good, and I don''t have to worry about the noodles staying in place!

this is my first post in this thread... i''ve read through all the replies and I''m just drooling over here!! talk of those shredded beef sammies is really making me want a BBQ pulled pork sammie...

tonight I''m having leftover chicken piccata--- of which we have a TON!! when it was made we didn''t anticipate my sisters not being over and FI being on a business trip... which leaves me to eat it all!

When FI gets back though I''m going to make the best chicken sammies ever! well, maybe not ever- but they are still pretty darn good... I marinate the chicken in italian dressing, make focaccia bread, grill the chicken, and assemble the sammie with pepperjack cheese, tomato, basil, and sometimes if we have it, cucumber or red bell peppers. A lot of times I find it doesn''t need a dressing, but occasionally I''ll add ''lite ranch''
