Not sure what my plane is with this particular stone. Most likely a pendant but I''m a bit scared about how to go about setting it. It does seem so delicate. I wonder if bezeling would work?

Mochi no! With bezeling you have to put a lot of pressure on the stone to "fold" the bezel over. This will be dangerous with that inclusion I think.

How about a wire wrap pendant setting? There are infinite wire wrap styles, so you should be able to choose one that you find pleasing. Here is an example from etsy seller mandalarain.

Bezeling is actually MORE stressful on a gemstone during the setting process!
