Could someone please tell me if this would be too much of a low colour grade for a 2ct round brilliant? I'm sure I read somewhere that RB's hide colour quite well but would you be able to see the yellow tone from the side more than face up?

It’s tricky but it all depends on the eye. Some will see a warmth and some won’t. Best to see them in person in natural lighting to decide color preference.
 
You'll be able to see any color diamond's tint more from the side than you will face up; this is the nature of color in diamonds.

Whether it's "too low" or not is an entirely subjective question that we can't really help with here. "I" would be perfectly acceptable to some and absolutely unacceptable to others.

There's also the matter of "seeing the difference" and "being bothered by the difference." You may well be able to see an I-color stone's tint, but whether it's enough to bother you is another question entirely. Technically speaking an I-colored stone is in the "near colorless" range, so its tint will be minimal.

As diamonds get larger, their color/tint is, of course, easier to notice.

Best suggestion - go look at some variously colored GIA/whatever cert you're buying stones in person at the size you're considering. Only this way will you be able to know for sure what your personal "sweet spot" on diamond color may be.
 
I think you have to try it out and see. I tend to be tint sensitive, but I have a CBI K 1.09 and I love it.

But, yes, you will see more body color in a larger stone.

Yes, you will more see tint from the side. The larger the diamond, the more tint you will see. So an I at 1ct I likely won’t appear as tinted as one at 2ct. Also, the lower the color grade, the broader the the range. So the I grade has a broader spectrum than the D grade, hence you will see terms like “high I” and “low I”. And depending on which lab graded the diamond, the tint may be very obvious and bothersome. GIA is generally regarded as having the highest standards for grading color, followed by AGS (though he consensus is that AGS is now on par with GIA in grading color). So a IGI graded I would likely be graded as J or K by GIA.
