How easy and how much can you typically resize pave setting?

for instance, if your SO is in between sizes or varies depending on the ring (between 6-7)?

Always have a pave ring custom made unless the stock setting is the right size. It's best to never to size a pave setting. Everyone's finger size varies due to weather, etc, so you generally go for the size they wear comfortably in the summer or when the fingers are most swollen. The engagement ring tightens up some when worn with a wedding band. If a ring is too big, sizing beads can be added to the shank and they can also be removed if the ring is too tight. But it is never good to repeatedly size a pave ring, or you'll end up with loose and lost stones.

So if your SO wears a 6.5, then order a 6.5 setting that has a head made in the right size for the diamond.

thanks for the response. thoughts on ordering a Mandrel via Amazon to measure a few of the rings she wears the most to get a good idea without ruining the surprise?

If you grab one of her favorite rings, and take it to a local jeweler, they will most likely have no problem helping you out by measuring the ring. With pave, you don't want to go more than a single size up, and half a size down. Going down is actually more tricky than going up because it can loosen the pave.
