How are you eating during the virus lockdown?

Don't mind at all but how familiar are you with making lemon curd and chiffon cake?

For the curd I follow a website loosely and do a bunch of substitutions in my head (because I use calamansi).

For the vanilla chiffon I only have a list of ingredients because the process is so ingrained in me.

Would it be helpful if I posted all this (ingredients, links)? I don't have it in me to write out a coherent recipe o_O

I'm a bit of a hot mess when it comes to recipes. They are usually scribbled measurements of ingredients :lol-2:

Sure, no problem! I've made lemon curd a lot (usually for tarts) and I made a pandan chiffon cake semi-recently, so I roughly know the technique.
 
Thanks for the idea-I just found a recipe for sugar free bacon jam, I think this will be a great option! Sadly no crusty bread, but I am sure I can come up with something low carb to transport the brie and jam :)

@Matata Thanks again for the bacon jam suggestion! Hubby made the sugar free bacon jam-it turned out fantastic! He is going to make brie and caramelized onion stuffed hamburgers topped with the bacon jam for dinner tonight yum :) I will be making a sugar free, grain free lemon pie topped with strawberries for dessert.

I'm delighted that you like it. I first tasted bacon jam and brie at a martini bar where it was offered as an appetizer and at first bite remember murmuring "where have you been all my life" :bigsmile:

Chiffon cake

6 eggs separated
100g sugar (25g to yoolks, 75 use with whites)
180g Self raising flour
80ml oil
100ml water
Vanilla extract

The lemon curd. I use calamansi juice. I love calamansi so much. Lol my 7yo and I sniff it whenever we cut one. Smells so nice

The outside of the cake is fresh cream whipped with a dash of vanilla.

Ugh I’ve gained so much weight. Im usually always on the go and attend fitness classes three days a week. Now I’m at home sitting on my ass baking and snacking with my toddler. It’s going to take awhile to come back from this
 
Soooooo I wanted something spicy for like ages. I kinda overdid it. I had peppers, meat and cheese over toasted oat groats last night for dinner. I'm soooo paying for it today. Its all getting cleared out y'all:shock::lol:
 
Buttermilk biscuits with Saskatchewan organic wholegrain spelt and plain sifted wheat flour. I ate two fresh from the oven with an indecent amount of maple syrup! :bigsmile:

Initially I lost weight because there was not much fruit available in the supermarket because they cannot pick fruit and social distance at the same time plus the vegetable quality was not so good and super expensive due to the drought, then bushfires and interrupted supply chains. Then we discovered the local farmers market which had better supplies of these things (even though we are inner city so not much farming going on locally) and my eating improved. Now I am finding that I have put on a little weight because I am not as physically active as I was before. I am working from home now and this has been busier for the most part than going to the office so I haven’t been moving as much. We made Anzac biscuits on Saturday. I enjoyed them immensely but I am wheat intolerant so I paid the price for eating them. Never mind, ANZAC day comes but once a year.

i thought the harvest was going ok here anyway
our little 4 square had a better produced selection than nornal just a little on the expensive side (normal for them)

the cats got descent food and temptation cat lollies and Tibby likes the Ilams chicken urinary track health cat biscuits

i was so nervous about click & collect
i had no idea what to do
there were about 5 people in the quee to get in butbi sales the man in the high viz vest manning the hand sanitizing station and he directed me to the service desk where i waited maybe 30 seconds and then about 3 min for my shop to arrive
every 2nd check out was open with about 3 customers each all spaced out 1m apart
only one substitution which was ground cinnamon
as i was leaving there were maybe 7 people waiting to get in and Mr hi fiz said the store was 'full' so there would be a delay and also they were sanatizing the trolleys

from the front of the store i could only see a few people shopping in each isle
but the mall was all blocked off and i felt quite tearful thinking about the people who usually work there

id rather Gary hadn't help load up into the car not just because of covud 19 but because he complained about all the cat food.
but he got all his hot sauces and i now have a freezer full of frozen veg and meat and my pantry is looking much more healthy and the fridge is full
and tomatoes were only $3 kg :kiss2:
 
and when i was putting the frozen chickens in the freezer i found a big bag of coconut !!! happier days =)2
 
Steamed fish and steamed abalone. I also made a plate of stir fried greens.

There wasn't enough food! Not enough protein for the boys.

Next time I will fry some spam and serve it on the side :D

I had a dream last night that I went to the grocery store and little tubs of Land O Lakes butter were stacked To The Ceiling LOL.
