How are you eating during the virus lockdown?

Tonight at midnight I'm making soft shell tacos, and making corn tortillas from scratch.

Kenny's Corn Tortillas
Makes 9 tortillas

Put in mixing bowl:
1 c dry masa harina
3/4 c water, room temp

Mix gently but thoroughly with fork, add a bit more water if too dry.
Try to finish mixing it in 2 minutes.
Hand form into one large ball.
Put ball back in mixing bowl, cover tightly with food wrap or moist dish towel.
Let sit 20 min at room temp.

Preheat comal (or heavy cast iron skillet) on med-high heat to 450 F, or till drops of water dance.

Form 9 balls of 36.7 grams, or 1.22oz each.

Cut a quart-sized Zip Lock freezer bag so it opens like a book and place it in the tortilla press.

Place a ball of dough in 7" tortilla press.
Press lightly.
Check size, press again harder if tortilla didn’t reach the edge of the press.

If you don't have a press just use the heaviest skillet you have as your press, but use that ziplock bag to prevent sticking.

Hold raw tortilla 1/2” from top with 3 middle fingers held together, quickly with the bottom touching the pan first, gently unroll it onto preheated comal while proudly singing, “OLE!”
Cook 30 to 60 seconds … you want a few brown areas on bottom, white on the edges, and for it to be peeling up from the edges.
Flip and cook other side about 20 seconds, and it starts puffing up in spots.

Add it to the stack that is wrapped in foil and kept in warm low oven.


Mom calls, do you have a recipe for enchiladas? I'm like nnooooo. But puts a bug in, I'd like to make my own tortillas. Thanks @kenney. But I Have no corn flour. Off to a bad start.

Sorry, this isn't about pasta @TooPatient but are you using your smoker much these days?

I haven't been, but need to! The weather was iffy and I didn't have the energy to clean the grills each time. I have a corned beef brisket that will need smoked soon and sweet potatoes that would be wonderful smoked.
 
Dinner tonight was empanadas. A local family from Argentina runs a shop for empanadas and has started doing delivery of their frozen empanadas. Bake for about 20 minutes and enjoy. So dang good! Mushroom & cheese, spinach & cheese, caprese, and hummita tonight. We also had their chicken & peppers plus sirloin steak in chimichurri another night. So good!IMG_20200422_194316853.jpg
 
@Phoenix give you my nem nuong recipe in a few days! It's on my drive!

I have to make it coherent. I'm the classic Viet cook. Instructions that only make sense to me! I do have the right measurements though!

The only issue is nem nuong actually has a lot of sugar (I was horrified many years ago when I researched it to form my recipe). You can omit it but it won't have that taste. Are you ok with that?

Hmm...I didn't know it had sugar in it. I think it could be my once-in-a-while treat. Thank you.x

Truffle mushroom fried rice and asian roast pork belly (heo quay)

Hubby has weak teeth so I remove the skin and crackle it in the airfryer after roasting. It produces perfect crackling.

We had sauteed green beans too but that's not particularly exciting!

I made tonkatsu for lunch and it was delicious! This is a great recipe and I’ll be making it again for sure.

Deconstructed chicken enchiladas. Deconstructed b/c my corn tortillas fell apart. LOL. Lesson. Looked like hell but tasted delish!

I have never made bread, not much of a baker period. But I just made banana bread which I pretty much ate the entire thing alone since kids decided they didn't like it, and I just watched a dozen YouTube videos on bread making in preparation for (hopefully) receiving a grocery order that includes flour and yeast. My order of stand mixer will arrive next week. I don't even think I have measuring cups, I haven't used one in years.

Greg enjoyed seafood ravioli last night. He said it was quite delicious.

Sweet potatoes yummmm. Thanks to my sweet DH for making these this AM. Should last me a few days. I like my carbs. :lol:Especially my Japanese yams. They’re so good.

Thanks for the idea-I just found a recipe for sugar free bacon jam, I think this will be a great option! Sadly no crusty bread, but I am sure I can come up with something low carb to transport the brie and jam :)

Ahhh I wish I was better at cooking Asian food. My mum would be ashamed lol but it's her fault she never let me in the kitchen! I can make some simple Cantonese dishes and a few Shanghai and Filipino dishes but mostly I cook Japanese and some Western style food (husband is from the Midwest of the USA so he mostly can cook what I call "white" food...i.e. white coloured food like pasta, potatoes, cheese, chicken breast, etc :lol:). I love all the food you've been posting, literally drooling at all the yummy Vietnamese food!!! :mrgreen: Those shrimp summer rolls look fantastic...and that pork belly!!!! omg...

LOL. We made an incredibly "white" dinner the other night and were laughing at ourselves as we ate it :lol: It was spaghetti (angel hair) with lemon chicken, riced cauliflower, and Parmesan. Couldn't have been more white!

Toasted and spiced pecans. One was batch was cinnamon with small amount of stevia, the other batch was garlic and chili. both are exceptionally good. I found 4lbs of pecans in the freezer (yeah....lol) so I figured I should do something with them.

That looks delicious! I'm totally craving it but totally out of bread for now. Will be trying my hands at bread making assuming my flour and yeast order doesn't get cancelled.
