How are you eating during the virus lockdown?

My 7yo looooooves brussel sprouts. Comments like "a few more pieces of brussel sprouts please mummy" are common in our house.

We also have to donate asparagus to him.

As for cucumber and tomato if you put a plate in front of him he cannot resist. He will keep eating and eating it no matter how much he's had.

You are lucky! In our house, it's really a lot of pb and j, chicken nuggets, white rice, pasta with butter, and oatmeal. That's about it!
 
Omg it was sooooo good!!!! I have to leave one raw one for Lil sis but I could have eaten more!!!!

I wanted lots of moist scallions in mine so I didn't make a true flat pancake.

Now for my dirty little secret. I have no qualms about msg. Grew up with it. Handle it like a champ.

So I added 1/2 tsp chicken powder to my scallion mix.

Soooo flavoursome!!!!!

You give me a months notice so I can practice! I've never made it!!!

I know all the theory but never tried to execute it. I suspect it's an abundance of oil for crispiness.

Experimenting with scallion pancakes right now!

No I don't think so because it needs the stretchiness from the gluten.

However I've watched like 15 years worth of America's Test Kitchen and they apparently have developed this excellent gluten free mix. I understand you're dairy free too? I would omit the milk powder. I don't see that as an issue.

Lol so to sum up my long windedness I would use: all white rice flour, the other starches called for and omit the the milk powder.


Or you can buy a pack of gluten free flour from the supermarket. I always do things the hard way :lol:

Yes, I am gluten, dairy and sugar free. Quite miserable about it tbh. I don't mind so much the sugar and dairy free since I don't have much of a sweet tooth and am lactose intolerant. But the gluten free is really bothersome - I miss homemade pasta, dumplings and wheat noodles!;(

Aww I'm sorry @Phoenix that you are having a challenging time of it. As you know I too am gluten and dairy free as well as many other dietary restrictions. I find that for the most part there are substitutes that make giving up certain foods less painful. I do miss pasta though and bread. I haven't tried the gluten free bread or pasta yet. For some reason I am not ready for that potential disappointment though there are some who swear by the gluten free foods. So maybe they are good.

made Belgian biscuits today - Gary didn't like them and said they looked like something his grandmothers would have made
i said "yes ...and ...?"
he hates cloves and i thinl maybe there is the tinnest hint of it in the mixed spice
they are supposed to have very pale pink icing but i had some chocolate icing left from the other day - so you can hardly see the red jelly crystal

last night i made a potato and onion bake - actually i made two because Mr fussy doesn't like pea and ham soup ...so his one got onion soup mix made with milk powder- it tasted like dip :lickout:

anyway i know what im having for lunch for the next week - sigh

tonight i made fish pie - just a maggi sachet and a tin of smoked fish which im nornally not that keen on but it was tasty with lots of peas & corn and topped with cheesy mashed potato
i was tempted to scoff the lot but left some for tomorrow

Hubs says his worst nightmare in life is to try and feed me. He's thankful he can't cook!

I have several existential crisis' about food each week.

The highlight was when many years ago my young child was cajoling me into eating creamy pasta with chicken and mushroom.

Me: I can't eat it

Then 4yo: What do you mean you can't eat it? You made it!

Me: You know I only eat cabonara.

Then 4yo: You're very strange Mummy.

Hehe I had the last of the Bun Bo Hue today and the 7yo was pining about it. He said (wistfully): I wish that was my dinner but you get the best meal because you're difficult.

Poor baby ate creamy pasta (my cop out dish).

In my defense I saved the last cucumber and tomato for him!
 
May I ask you bakers a question about mixers? Little off topic so I apologize.

I'm thinking about getting an electric mixer. While being at home, I've been cooking more than normal and having a mixer would make it easier for me to try more things. I'm thinking breads, cookies, cheesecake, etc.

I've always dreamed of having a Kitchenaid stand mixer. But it's quite expensive and I really don't bake much at all, so thought it would just end up being another gadget taking up space on my counter. But I am interested in doing more, even after the quarantine, and I found that refurbished mixers aren't that expensive.

But hand mixer or stand mixer? I like the idea of having an easy to use and clean hand mixer I can just whip out for small things, but am I just prolonging the time until I end up with a stand mixer? Then I might as well just buy the stand mixer I've wanted while the pricing is low and my needs for them are high (during quarantine). But I have no experience in either, so wanted to ask for your opinion.

I'm considering the Kitchenaid Artisan Mini 3.5qt Tilt-Head stand mixer.
 
I'm useless I have both and use both equally.

Chiffons, meringues, certain buttercakes the hand mixer

Breads, buns, cookies, pastry the stand mixer.

If I had to pick in your situation: hand mixer. You CAN mix decent bread +pizza dough with the hand mixer, but chiffon, meringue, sponges in normal quantities are not working well in the stand mixer.
 
On second thought start off with the stand!

The hand held is more for convenience because I don't like lugging the stand mixer out of the cupboard. The stand mixer does everything the hand mixer can do. It's just annoying to lug out if say you were trying to whip 150ml cream.

I use both regularly, but started out many years ago with a hand mixer and then added the Kitchenaid stand mixer. My stand mixer does everything well, but still use my handmixer for convenience if making something small. So I think I would say splurge on a nice stand mixer and buy a less expensive hand mixer. Happy baking!
 
@Phoenix and @missy there are many tasty GF alternatives available. I have been GF for many many years and found plenty of great tasting things to buy and so many wonderful things to make. For the last four years I have not been eating any grains or starches so am more limited again, but there are still a few options :)

The best GF pasta I have tried so far is Manini's. It isn't quite the same as regular fresh pasta, but it is pretty good. I made some the other day and had a piece of DH's regular fresh pasta compared to the GF and I actually preferred the GF!
 
I made a lovely quiche yesterday, unfortunately, it smelled so good, we ate it before I remembered to take a photo :lol:

@Phoenix I believe both iherb.com and glutenfreesg.com deliver to Singapore, might be worth a look for some different GF items to try.
 
Here’s another meal that I just tried for the first time during while working from home. I just made shrimp wonton noodle soup (from costco) in under 5 minutes! For a prepackaged meal, it was pretty darn good, and definitely curbed my craving for Asian soup noodles. It was infinitely better than instant ramen! And it came with veggies. I added some sambal because I like a little spice in my food. Although I love to cook from scratch on weekends, I have limited time to cook during weekdays.
