1 : 0.65ct H VS1
2 : 0.56ct G VS1
3 : 0.66ct I VVS1

The 2 and 3 are about the same price, while the first one is $400 more expensive than those two.

SO I think the thing bothering me most right now is the color. Will it be an big issue? Or the simple rule is just, pick the largest diamond...

Comparing 1 to 3 : do I need to pay 400 more for an upgrade from color I to H?
Comparing 2 to 3 : Do I want to sacrifice the ct for the color?

I want to hear your opinions. Thank you all.

All stones are round, with white gold settings.

Edit ...In reality, I would drop the clarity to and eye-clean SI1 (or at least a VS2) and go from there.

You need to pick a well cut stone and you have not given us enough information to tell whether these stones are well cut or not.

You can run them through the HCA tool. Look for stones that score 2 or under. These stones are worth a further look. What are
the prices on these stones? Have you looked on line to see what you would be paying for these stones?

If all 3 stones were well cut I would take the stone with the biggest mm size.

Sorry I forgot the information. These rings are all from Tiffany, the prices are around $6200. SO I assume they are all excellent cut. By the way, what is eye-clean SI1?

I would go with G to H color with Clarity not lower than VS2, you could probably look for more diamond options here I am sure you will find many options and all experts available to provide right feedback.

Does Tiffany even list the specs for what they consider excellent cut? If it's like GIA's then there's a wide variance and you should use the HCA tool to see how the individual diamond scores. Tiffany certs have sufficient specs to give you enough info to ascertain how they should perform.
