can I determine the crown and pavilion angle from the total depth and table percent?

No, you will have to request these measurements separately. AGS certificates contain them, GIA certs do not.
If you ask to have the stone run through a Sarin or Ogi machine, those will return the full set of measurements for you.

should not be a problem. A vendor should be able
to make that information available to you
upon request.
