I'm looking to have a pretty simple 8 prong, split shank, knife edge setting made in 14k yellow gold. Size 5.25. I've contacted several jewelers and the quotes have been all over the board. What should I expect to pay?
Cost depends on many variables, one of the most important being skill. Before you pick a jeweler, be sure you are satisfied with that business' workmanship- if possible, feel pieces they've made before committing.
If you're looking for jeweler recommendations, I think Burdeen's Jewelry, David Klass, and Old World Diamonds (unsure if they work with outside stones) could execute that design well.

Most of the cost of this sort of thing is in the labor, not the materials. That’s important because craftsmen do not all charge the same for their time and talents. You’ll notice the same thing with any skilled trade from chefs to sculptors. The best are rarely the cheapest. Allow me to suggest the approach should be to choose the artist you want to work with based on primary criteria other than price.
FWIW, that is NOT an especially easy job to do well although it would be really easy to do it poorly.
