The All-Clad instructions say to use low-medium heat to avoid discoloration and for "optimal cooking performance". So what do I do when I want bo boil water, to make rice or spaghetti?

I tried going to the All-Clad site but it''s loading very slowly...

I hope this isn''t a silly question, I just want to prevent ruining the pot...
 
I don''t think it''ll ruin it, but high heat can discolor it. IMO it''s just a part of cooking with these types of vessels. My parents had all-clad stainless when I was growing up and the bottoms of the pots were all a bit discolored but they worked just fine...
 
I turn my copper core on high and have not had a problem. Just make sure you don''t heat it dry. I would expect that would cause discoloration.
 
Wonder if it could be a liability disclaimer issue!

I got it to boil without turning the heat all the way high...

By "ruin" I meant the looks of it...that''s one thing I don''t like about owning good stuff - we''re all worried about using them! Too much stress haha I want my ugly cheap pots back!
 
Nope, just use ''em. You can use bar keeper''s friend to clean, but they won''t ever look like new unless you just hang them up to display. They are not for show. Why buy the nicest pots and pans on the market and not get your money''s worth?
 
Thanks, JulieN...you''re absolutely right. I guess I just want to be diligent as far as not doing anything I shouldn''t be doing...but you''re right, other than that, I need to just enjoy them.

Using them is what you are supposed to be doing with them! Just use common sense and you will have many years of enjoyment with them.

Ditto - don''t be one of those people with cool kitchen stuff that never uses it to cook...totally defeats the purpose. Nice handbags and jewelry are supposed to be kept looking nice, but nice cookware is supposed to be used
