Both seem like great stones, but is it worth the price difference to go up?

Both have great numbers. The difference in price has to do with the SI1 vs VS2. Is the VS2 worth more? It certainly is! If the SI1 is clearly eye-clean then go for the less expensive one.
One other factor is the symmetry and polish. The higher the better.

Those prices seem good. Searching for 1.2-1.25 H VS2-SI1 stones by cut, I came up with

1.202 H SI1 H&A for $7116

1.213 H SI1 H&A for $7173

1.248 H VS2 H&A for $8124

AGS0''s came up as $7243 to $7765 for a 1.21 H VS2 and $6288 to $6882 for 1.21 and 1.22 H SI1''s.

Anyway, that aside, I say that one bump up in clarity is not worth $850 or 12% more unless there is a problem with the clarity (visible inclusion, black carbon spot, something like that), which I doubt there would be (Have you seen it? Have you spoken with someone who has seen it?). I would not spend the extra $ on a stone that is actually a couple of millimeters smaller in diameter and is of the same cut quality. Now of course, this is all off of the stats and numbers. In person, one might appeal more to you, but from what we know, I''d stay within your budget and get the SI1. If I were going to spend an extra $850, I''d devote it to a larger stone and/or better color and/or a branded H&A stone . . . something that you might be able to see.
