Enerchi, care to share your recipe for oatmeal chocolate chip cookies?

I love anything with chocolate, but I also like sugar cookies, Mexican wedding balls (that's what my family called them anyway), and gingerbread cookies. I'm not much of a cook or a baker but I like to try and make a batch of cookies this time of year.

This is the only recipe I know by heart!
Wet combination:
1/2 cup each brown & white sugar
1 cup butter, softened
1 egg (beaten)
1/4 cup milk
1 tsp vanilla
(mix all together till smooth)

Dry combination:
1 cup cake/pastry flour (I never have that on hand- I use regular flour or whole wheat flour - hey, if I'm in the kitchen, its all about MY RULES!)
1 cup rolled oatmeal
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup of what ever you like - chocolate chips, white chocolate chips, butterscotch, raisins, walnuts.... what ever you desire - and if you want more than 1 cup - live on the edge!

mix wet and dry together, stir till 'sticky' and if too runny, I'll throw in another 'shake' of flour or oatmeal (you'll notice the technical term "SHAKE"!)

Bake at 350 degrees on parchment paper x 10 - 12 minutes (watch your oven, you want them "tanned" not "charred"!"

Its not an exact science for me - I am not good in the kitchen so while these are the specific measurements, I'm all over the place, but they are yummy and they go quickly! :lickout:

Thanks for the recipe, Enerchi. These sound great.

Thanks so much, Enerchi! I made Alj's oatmeal cookies this weekend and I'm going to make yours next weekend. Hers were delicious, by the way, and I'm sure yours will be as well.

I told my mom the other day that I was going to be in the kitchen a lot over the next few weeks, and her reply (knowing that I'm SO not a cook or baker of any kind) was, "oh, yeah, doing what?") :cheeky:

   Seems like you and I cut from the same cloth - people say the EXACT same thing about me!! Friends know better than to assume anything I bring to an event was ever likely to be made by me.

My husband's phrase that I hear ALL the time is - "when in the kitchen, just remember, you are only a guest"! You can be a guest too!

Enerchi, I just made your oatmeal (with chocolate chips) cookies, and they are awesome! I added more oatmeal than the recipe called for (around 1 more cup) and they came out great. I couldn't wait for next weekend. :lickout:

WOO HOO!!! I'm so impressed that they worked out!!!

Its like a little miracle when that happens! :D

Not really a holiday cookie, but they were part of my Christmas baking for the past few years - Martha Stewart's Lime Meltaway Cookies. Last year, I made a pistachio cranberry cookies that DH loved.

I like peanut blossoms :wink2:

I love good old fashioned, super short, rich, buttery homemade shortbread. One of the girls at work brings in a giant tin of it every Christmas Eve, she also drizzles hers with melted Cadbury chocolate. OH MY :lickout: :lickout: :lickout: :lickout:
