I made a baked macaroni & cheese for dinner yesterday. It wasn''t all creamy like I was hoping for but the flavor was just mmmmmm.


The cheeses I used:

1 year aged Oregon cheddar
Australian white cheddar
smoked white cheddar
mozzerella
smoked gouda
aged gruyere
manchego
leerdammer
jalepeno jack
parmesan


If we ever recover from the dairy, I want to try again for something with the same flavor but more creamy. (less casserole like, more oooey goooey meltiness)

I found a recipe online that sounded really good with 4 1/2 out of 5 stars (with the exception of one of her cheese choices -- velveta -- so I used the gouda instead).

Rather than the bechemel sauce, she called for beaten eggs so that it would hold together a bit better. I almost left them out in favor of doing a bechemel but was curious how hers would turn out.

The flavor was nice -- all of the different cheeses worked nicely together and made for a complex and yummy dish, it just wasn''t as creamy as I was picturing. I think using a bechemel instead next time would fix this.

The velveeta was there for the texture it adds. That was where you lost your creamy consistency. Try it with a bechamel next time. Consider using cream instead of milk if you''re really concerned with it being dry.

Bechamel rather than the eggs should be a huge help. It looked just perfect before the eggs set up.

The gouda melted into a really nice creamy texture but I guess nothing out there matches velveeta for absolute smoothness.

Hello ladies,

Got my new little stacker last week that I bought with my award money and it does go to show how little bang for your buck you get jewllery wise in New Zealand. It is very cute though and I might have a second try at getting photos for the place holder thread in LIW, it just looked horrible in the pics of my last attempt, macro make everything look so chunky. I''m already secretly plotting the work I want done to it, but that can all wait.

TP- that sound like a very flavourfull and expensive way to make mac and cheese!

The mac & cheese was good (just not creamy enough) and not nearly as expesive as you''d expect. ($30 worth of cheese and I''ve got enough left to do another whole batch -- about 3-4 dinners per batch -- so it comes in at about $5 total per meal)

LOL! A couple of my friends getting married this year would probably murder me if I told them that. They're very sensitive about their age being around thirty when they get married when their mothers have been bugging them to get married for about ten years.


Only a couple days away from being proposed to and I just want to grab his shoulders and shake him because we still keep arguing about little things. Men! Can't live with 'em and can't live without 'em!

Tiny rant that deserves a post but not a thread

My man is one of those "You take care of scheduling, planning etc" but then changes his mind about everything and expects me to reschedule for him like 3 times in a row. I've gotten fed up after another last minute change after I said are you sure last time. Our conv went:

Him: You know what, we should reschedule. I'll be tired that morning.
Me: Here's the number: XXX-XXXX
Him: Why are you giving me the number?
Me: So you can reschedule.
Him: ... Ok, I'll let you know if we should reschedule or not.

When I am (finally) engaged I will go to the casino.

I don't gamble but BF does. I sit and admire peoples bling at the tables which happen to have great jewlery lighting. If we get a good table (AKA a table where over 80% of players have daimond rings, bonus points if the dealer is wearing a diamond ring) I can entertain myself for hours.

When I am engaged I will sit at one such table, hair and makeup done to perfection, wearing an expensive cocktail dress that makes my breats look amazing, with well co-ordinated towering high heeled shoes and clutch, and I will gently and slowly rock my ring finger back and forth, allowing my little stone to capture the light and admiring the streams of fire and sparkels it spits back at me while I sip a delicious and calorie free fancy pink coloured cocktail out of a martini glass as my equally fabulously dressed new fiance wins millions of dollers and declairs that his "baby needs a new RHR".

Underwear and shoe shopping is the best! I am dieing for a pair of pinky nutral colour heels in a semi-practical hight but can''t find exactly what I want anywhere. I''m picky.


BF''s birthday prezzy might be arriving today so I''m keeping an eye and an ear out for the fedex van. It''s his big 3 0 in June which he is not pleased about so I had to soften the blow with an expensive (for me) watch. Looks like customs has waived the import charges (YES!) which means ordering from the states has saved me about 50% on what it would cost to buy it locally. He better friggen like it if he knows what''s good for him!
