Unfortunately I don't know either...experts??

Is a thin or thick girdle better?
Is it ok to have a small culet or is non better?
can someone tell me what range to look for in depth and table?
should polish and symmetry be excellent for it to be considered ideal?

I'd pass on this one. It doesn't look very good to me.

Now, let me answer your questions:

A thin girdle is better than a thick one, as you won't pay for some weight that you cannot feel. You can consider it fat. Actually I prefer a medium girdle to a thin one. Less risks of chipping.

A small culet is absolutely okay. Any thing up to medium is not visible with the naked eye...

There isn't a rule... Usually GIA ex/ex = AGS id/id, but it doesn't always work in that way. If you want a true ideal, stick with ex/ex or id/id.
