Wedding Seating at long banquet style tables?

So we haven't decided yet on traditional rounds or long, banquet style tables, but I was wondering - for those of you who did long tables (i.e. >10 people per table) how did you do the seating chart? If we did rounds, we were just planning on assigning people to a table, and letting them pick their seat.

It seems like for a bigger table, you'd really have to designate each seat. What do you guys think?

We did long tables and assigned seats. I really liked it, made it feel like a family dinner.

But that being said, I would assign seats at a round table most likely too.
 
We are likely going to do the long tabels as well. I think it different and easier for guests to talk. To play on that thjeme of making it feel more like a family dinner, we are probably going to do family style dinner. I am going ot have it that instead of 5 per table, there will be eight. Four on each side, then an empty space on each side of the table. This space will be suded for the serving dishes. Because of this set-up, we will have tables of 8 within each of the long tables, so I will name each of those sections of 8. we will ahve placecards as well.
 
I think instead of having escort cards (where they find their card and take it to a designated table) you can have true placecards and have them already set out at their place, and the guest then just finds their assigned seat.

I was thinking of doing this, along with a seating chart on an easel. But then you can''t make changes at the last minute if people cancel or add. Has anyone done this?
