DEFINITELY don''t buy anywhere locally until you talk first with John Pollard at Infinity Diamonds US. I''ve met him in person (he''s locally based) and he''s definitely the diamond expert I''d seek out in the Dallas area for future purchases.
One small bit of advice: read about different diamond vendors on Pricescope. There are are MANY PS members who have purchased online from PS-approved with stunning (and well-priced) results. These vendors work very hard and ethically for PS members because of the power of word of mouth.
Also, stay away from those Zales/Whitehall/Zales Outlet-type places... poor quality, terrible value. Go look at Jared near the Dallas Galleria if you must (big selection with some Hearts of Fire diamonds) but DON''T BUY THERE. You pay a big premium for their overhead and decor. Your girlfriend will have a blast trying different designs on and seeing what looks best on her hand.
Also, I heartily recommend that you two have a nice brunch and a glass of champagne first before you look. It makes the shopping more fun and dissipates the sticker shock more quickly.

It''s important for your trip shopping that you go with the intention of JUST LOOKING! John Pollard is local to DFW, and if you contact him, he can get you into the World Trade Center to see some Crafted by Infinity diamonds in person. Anne and I have been there, and they are stunning to see in person.
Also, inside of the World Trade Center is Cook Diamonds. I''ve dealt with Coni there and I think she''s fabulous. They can find AGS0 diamonds for you, and they have some lovely settings and have done some great custom work.
So, if you''re just going to look around for ideas but NOT TO BUY, go to Northpark Mall. There is a DeBeers, a T & Co, and Eiseman''s Jewelers all within 20 feet of each other - a great place for browsing and window shopping. You could also go to The Galleria, which has a Bachman''s, T & Co, and a few other higher end jewelers.
Great suggestions Lauren! Also there is a Cartier at the Northpark Mall for eye candy as well, right next to T&Co & Eiseman''s. There is a Bulgari store opening soon, might be open already, not sure. Don''t forget to check out Neiman Marcus both Northpark and Downtown locations, you can often find some amazing estate pieces, some surprisingly reasonable. I got both my original ER and upgrade at NM. Great service, highly recommend. Also at Northpark mall, there is a Bailey Banks, Zales, & Ben Bridge for more stops in one location.
For more eye candy, go to Harry Winston and William Noble in Highland Park. De Boules in Preston Center. Matthew Trent, I''ve never been, but their website has lots of eye candy.
There is also Robbins Brothers off of the Tollway, they call themselves the world''s largest engagement ring store. They have a ton of semi mounts to give you ideas. Have so much fun!!! I LOVE ring shopping!!!
