Buying the loose diamond from Ritani then having it set at a local jeweler is exactly what my wife and I did last September/Oct.
Went with a Stuller 14k WG shank with a 6 prong platinum head...was about $900 for the setting, mounting, and finishing. There are cheaper options, but then there are also much more expensive options. All depends on what you're wanting and who you're working with.
