Here is what the gemologist had to say:
I am happy to tell you that the gemologist found the 0.75 carat-I-VS1 (diamond 17518 and the 0.75 carat-J-VS1 (diamond 178783) to both have very good fire, brilliance and scintillation that is very well balanced. Both diamonds are a nice white color and face up eye clean. She personally preferred diamond 175188 because it faces up the largest. The 0.73 carat-H-SI1 (diamond 176366) also has very good fire, brilliance and scintillation, however, she found it to be the weakest of the three. It the whitest of the three and faces up eye clean.

I want to make sure the side stones dont overpower the diamond in terms of whiteness, and overall looking for the diamond with the greatest fire, brilliance and scintillation....

First of all, congratulations! The gemologist is really in the better position to guide you since s/he have been able to actually view the stones side by side and make a determination of performance and quality. However, all things being equal, I would go with the larger stone and it's higher color grade as well, and it will look beautiful in your setting choice!
