Thanks all for the thoughtful advice!
For now, we are keeping our eye on the ovals recommended above, working with Good Old Gold to source some additional options and my FI will also likely go view some options in person with his friend (keeping all above suggestions in mind and he will not be buying anything on the spot!) We'll be back to ask for opinions from the experts here, I'm sure!
We also reached out to both David Klass and Maytal Hannah regarding the setting, Maytal has been super responsive and I think we will be working with her! Very excited and so grateful for everything we've learned on PS!
