No bake cookie recipe needed.

I'm going to a cookie swap tomorrow. I am baking a double batch of my shortbreads, but want another easy cookie. I've never made any, though I've eaten quite a few.... ::)

Anybody?
 
Ok apparently there are really only a couple choices of flavored oat cookies, so I am scratching it.
 
Not exactly a cookie, but I make this peanut butter fudge every year - super easy and highly addictive. Today I lectured my toddler about how we eat only one piece so we don't get tummy aches, and then I hid in the pantry and ate a second piece.

:lol: That's such a mom thing! My SIL says she has a secret, personal candy stash at her house, and I've heard of other moms doing the same.

I actually mentioned bringing fudge to this, and got a somewhat cool reception to the idea from the hostess. :/ So while it was a great idea, I better not. I will check out that recipe though, thanks!

JPie, when my boys were all at home, I would go to the store and buy myself some cookies or ice cream and have to hide it under my bed or in the depths of the chest freezer in the basement. Otherwise, it would be history in less than 12 hours. I don't miss that lol. :rolleyes:

Ha! My poor mom tried all sorts of hiding places, but I had persistence and a wicked sweet tooth. I expect I'll have to be stealthier as my daughter gets older, if karma has anything to do with it.

Sorry I confused you! I wanted to go no bake, but in searching, there seemed to be little variety. So I pretty much scratched that idea, and yes I am considering baking something else. Thanks for the recipe, it sounds very "Christmasy"! And I have all the ingredients. I will let you know if I make them. :))

maybe the hostess just doesn't like fudge? I'm not a fan myself, and personally feel like fudge just ruins perfectly good chocolate with too much sugar. However, I love rice krispie treats.

I live in CA you can't turn around without a sign declaring that the building, the plant, the product, the food or drink, etc. has been known to cause cancer.

It has the opposite effect as intended instead of making you more careful, we just look at the signs now and think apparently we should all be riddled with cancer of every time.

Things that are added tend to hurt the recipe. It is sweet, but not sweet like fudge. And it gets eaten up immediately no matter where you bring it. Well, I have never brought it to a very sophisticated event, but if I bring it to any family or friends event it gets eaten immediately. Do try it! I used to make several batches every Christmas along with my Scottish shortbread, no matter what else I baked!

Russian Tea Cakes (and my mom's Sugar Plum Jam Thumbprint cookies) end up being baked every single year since they are so yummy and pretty and also look great on a cookie platter.

I make a buttery raspberry jam thumbprint cookie. They just ooze "Christmas". :love:

I ended up making these in the link below. Mainly because I could halve the recipe easily, still have a lot of cookies, and had all the ingredients (which intrigued me with the rice crispies). I had two recipe requests, which was nice. I personally was not overly crazy about them. They are thin and rather dry/delicate. Also needed more chocolate chips imo. I have no clue why they are called this....

I was all set to make the ones you suggested, but realized I had Blackstrap molasses. I read up on using it in recipes, and came to the conclusion it might very well ruin the cookies by being too strong. So I went to the store today and got some mild molasses and will let you know how they turn out!

And I'm with you and Deb loving shortbread cookies. It seems to be either a love em or hate em type of thing. My youngest says one would like them if they like eating sand. :lol: Dumb kid. ;))
 
@Ellen I saw this article in "The New York Times" today and I simply had to draw your attention to it. I do not know if you want to invest in a container of custard powder. (I am tempted, but I often buy things on impulse that then sit on my shelves, unused, past their expiration dates.) This recipe really caught my imagination. It looks delicious and it is extremely popular in Canada and, of course, it is no-bake!

Have any of you Canadians eaten these bars? Made them? They are called Nanaimo bars.
