I''m making ENGAGEMENT CHICKEN tonight, ladies ... wish me luck!!!! Not so much luck with the Engagement part - as I think my new hubby of 1 month might be peeved if I was to get engaged again so SOON after the wedding & all ...

I''m sure it will be great!. Just make sure you do it well in advance as I think that recipe didn''t have reasonable cooking times!...just go by the thermomether!...

As you know I didn''t follow the recipe exactly...so that explains why I''m not engaged yet! HA!...but I think it was worth it because the flavor was just amazing!...so I jinxed the magic of the chicken and my engagement for a flavor-full dinner! hehe

I added rosemary and garlic too!. Also make sure you turn the chicken around a coupole of times (so it doesn''t dry out)...or you can just use a spoon to baste it. At the end of the cooking time I brushed it with a little butter to get it nice and golden

lol Deco. I hope your chicken comes out better than mine. I didn''t like it. FI did though. I also didn''t exactly stick to the recipe. Mandarine''s modifications were just too tempting.

basting is KEY KEY KEY for something like that. and rosemary and garlic sound like must-have additions. i''d even put an orange or two inside the body (can''t remember if that was from the original recipe?)....

i would try it but i am too busy researching what recipe i am going to use for our turkey this year. can''t become deestracteed by engagement chicken this close to thanksgiving.

It''s lemons in the original recipe. I think I''d like oranges better. Hmmm...maybe i''ll try engagement chicken again some time.

You''d have to ask HIM about the re-proposing! But GEEZ if I shouldn''t have gone back to your thread & read up on the timing sit-i-ation. I think I got into DOUBLE trouble ''cause my bird was 4.3 lbs instead of the 3 lb. in the recipie.

45 minutes of cooking at 350??? Try an HOUR & A HALF at 375!! And the part near the bone was still RAW.

I also have no idea how they crammed two lemons into a three pound bird when my two kept poppin on out of my 4.3 pound porker.

But the part that didn''t still look alive was pretty delish.

And I tried to keep to the original (no rosemary or garlic for me) but I had to sub in 1/4 cup of lime juice to add to 1/4 of lemon juice as I only had one lemon for squeezing ... 2 for stuffing.

Let''s just say ... I''m glad I ALREADY have the bling! I doubt this would have been the deal-cincher!

You can cut a lemon in half and insert inside the body which will add flavour and moisture to the bird, also basting IS key! I have never known a whole chicken cook that fast Deco, so don''t worry that yours didn''t! Best to allow extra time to be safe. Get a cooking thermometer, they are great as confirmation that the bird is done, that will give you some extra confidence.

I don''t know why the recipe says 45 minutes... It always takes at least an hour to cook chicken! I hope it was good!
