I would pick the diamond stone out for her. A super ideal cut such as BG Sig or ACA or GOG H&A.
You could just have it set on any old band for the proposal, and go to pick the Mount together (as well as wedding bands?). I got her friends to come with me and we chose everything together, it made it special and she appreciated it. But then again, she's quite happy (or rather.. shes not "fussy").
