I was wondering about the impact (negative or otherwise) on the diamond if it is reseted more than once? Would resetting the diamond increase the risk of chipping, cracking, etc.?

every time a diamond is set there is a small chance of chipping.
What also happens sometimes is that it was chipped when it was first set and opening the prongs reveals it.

There's not a cumulative risk associated with setting diamonds. As Storm points out, there is a small risk of damage each time someone works on it but each time the risk will be entirely about the job at hand. If you are pulling and resetting it into the same mounting however, there are some metal fatigue type problems that can happen to the prongs.
