How do I calculate "depth" of my emerald cut diamond?

Your stone doesn''t have a cert? If it is loose, you can bring it in to your local jeweller and they have the measurement calipers that will give you the mm reading. If you know the mm, measurement, then you will be able to calculate the depth in %.

the diamond is in my ring, so I guess the only way to measure it, is to take it out.

Since I am adding on to my setting, I want to wait to get my ring appraised. I am just soooooo curious to know the exaaaaaaaact size of my diamond.
