I'm learning to pipe via YouTube videos and this is my latest effort.

Pretty proud of myself!

They are vanilla cupcakes because I looooooove vanilla cupcakes and forever in the search for the perfect cupcake recipe piped perfectly.

I love that recipe! I've been using it for years!


Ok so the lady who posted this got the recipe from a chef who is known for her gnocchi. I find them lovely and light which is a feat considering it's a carb dish!

Two things to note:

I'm a lazy gremlin so I boil my potatoes

I'm a cheap gremlin so I just use whatever potato is cheap

I don't use any of the eggs at all because everytime I've tried to use the eggs it's a very wet dough that is really hard to handle. After a while I just decided to omit all the egg.

Honestly can't remember what it was like with egg anymore. It's really light and tender without egg.

I love popcorn (a staple) but haven't had it in months since the lockdown. Can't risk breaking another crown with no easy help! Tonight I am risking it all!

i made a lemon drizzle cake
ive never heard of it but evidently its the Uk's favourite cake and its been around for 200 years
.....well considering 200 years ago there wasn't any lemon trees in NZ :mrgreen2:
i did not realize its bascially a sponge cake
i baked it in a deeper round tin than the recepie said
it was looking amazing but after the suggested time for some dumb reason instead of feeling it while it was still in the oven i took it out and put it on the bench .....and it was still wobbly in the middle
so when i put it back in it sunk in the middle
but i think it will still taste ok
i got it out and got the lemon syrup on it
i asked Gary if he wanted to lick the bowl ...
now im worried maybe it wont taste lemony enough :lol-2:

Yesterday I went out for Dim Sum for the first time since March.

I went to a cafe with my sister for the very first time on Saturday. It was fantastic!!!!!!! It was our first outing with each other since March as well.

I haven't been to yum cha yet (we call it yum cha in Australia) because during lockdown my boys decided they don't care for yum cha and never want to eat it again!!!

I love yum cha!!!!!!

Hope you are able to safely enjoy popcorn @canuk-gal. I eat it every night and forgot all about the potential to break a tooth or chip a filling cause I have been there and done that. Thanks for the reminder and I will eat it more carefully now!

Cold and wet here today.. Comfort food--beef tenderloin, mashed potatoes and peppercorn gravy, rosemary sourdough and butter lettuce salad.

HI:

Craving fish and chips. Couldn't find halibut so I used cod ("ocean wise") and made it from scratch. Was yummy, but hate the lingering smell.....

Is anyone else worried about things opening back up just in time for the summer? I mean, I needed all the extra comfort food to get through the pandemic and now I am not prepared to put on regular clothes and go out into the world! I've literally lived in stretch pants for 6 months!

My son loves Brie!!! I buy a wedge a week and it's so weird to go without this cheese for all your life and then suddenly you're buying wedges and wedges on a permanent basis.

I'm not even sure why he eats Brie!

He shares it with the kids at school and apparently those he's introduced it to love it too! No more string cheese for them!

We don’t eat “light and healthy” foods in our house. We all love dairy and carbs! Thankfully the 3 out of 4 of us like to work out, and the 4th (my son) has natural fast metabolism because he’s 18!
