How are you eating during the virus lockdown?

What’s vegan roast beaf?

It's a meat analogue comprised of high protein vital wheat gluten and flavorings to mimic beef. This is just one variety, there's also Chikun, Porq, Shrymp, Lobzter, Turky and others. Definitely not the same as meat, but a very filling and satisfying alternative for those that like meat but choose not to eat animals.

Yanno what I love the most about this? Botulism-infested garlic mashed potatoes" -- no comment whatsoever. But "vegan Roast Beaf" -- explanation please!

Love you gals so much!

P.S. - I do realize you had probably been following along the whole conversation Bon so you knew what was going on with the botulism, but it just struck me as funny!

Thank you, it IS tasty, if one can accept it for what it is, rather than expecting it to taste exactly like, or have the mouthfeel of the real thing.

@Dee*Jay I'm glad someone was paying attention to my attempt at humor...

The vegan roast beef looks tasty. I have gluten on hand and have thought of trying to make seitan, just haven't figured out how to flavor it yet.

Anyone eating anything yummy?

I haven't been posting because we've been mowing through leftovers.

Plus I keep making creme caramels. I stopped making them for years as I was under some peculiar impression it took a lot of effort. Not so! I can clobber up the mix in 30 min and then watch TV while it bakes which means this is my third batch of creme caramel. I need to stop!!!

Ohh I love caramels. I can just imagine your delicious homemade caramels. Swoon!

We’re eating the same so far. Salads and veggies and ice cream every day for me. Til it runs out and I can’t get anymore. Of course I hope I can continue getting what I like to eat but I’ll adapt if I can’t.

Homemade chili using the last of the grass fed beef I bought in March. Basic but good.

I made chili yesterday also! And fresh pumpernickel bread.

Today is off to a weird start thanks to no hot water heater meaning no dishwasher. I had a slice of cold leftover pizza (grabbed from my favorite pizza place when I dropped a payment off that direction -- an hour away) for breakfast then microwaved a frozen Healthy Steamers "general tso chicken" for lunch. Raspberry cheesecake and espresso for a yummy afternoon treat.

I'm still deciding what to do for dinner. So far, the only dirty dishes of the day have been DH's water glass, coffee cup, and tea cup. I can't seem to get him to understand that we have paper and plastic cups for occasions such as this...

Yuumm!!:lickout:

Are these store-bought or home made?

Store bought! The store bought banh Cuon and Cha lua is so tasty and inexpensive here. Totally not worth making it. The restaurants buy it premade too!

Plus if you know what day it's being delivered to the shops (Tuesday where I live) you get piping hot Cha Lua at around noon. You even have to cool it down before you eat it!

The noodles are fresh in Monday, Wednesday and Friday as well. Sydney has a really well established Vietnamese community in my area!

I'm sooo jealous! Hopping on a plane to Sydney tonight!

What's the population of Viets there?

Anyone have any good ideas of what to do with leftover spiral ham? Besides just heat and eat of course. It's from Easter, it's been in the freezer so it's fine. I was thinking of maybe something casseroly and easy but I'm at a loss.

When I was growing up, my grandmother would make mac n' cheese with little chunks of ham in it. She would do a seasoned breadcrumb topping with butter and bake it till it was bubbly and melty, and the topping was browned. It was SOOOO good!

Sandy, that looks DIVINE! Do you mind posting the recipe for the coating? I've been making oven fried chicken with just egg and "Italian" seasoned breadcrumbs, but it's borrrrrring...

OMG I love those! Especially the kind with red bean paste in the middle.

Making them was a lot of work, might be better off buying them from professional bakers.

Ate them like old school bo lo yau

They look yummy but also look like they would be laborious to make. Most good stuff is!

One thing different now ...

I used to always keep the kitchen stocked with many perishables I considered to be essential 24/7.
Now when I run out of some I just make do (due?) with whatever I have so I'm not running off to the store 2 or 3 times a week.
Now, I'll just put milk in my coffee when the half and half runs out.

This also results in less waste, especially of the healthiest things like fresh broccoli and cauliflower.
We end up eating some different dishes as a result.

Thanks Dee! It's really tasty, but I do have to advise that it may not work for baking. I asked about that and was told they would come out soggy, although I theorize it might work if you baked them on a cooling rack, but I have not tried that yet. I like spicy so I DEF use the smoked paprika and a little chipotle powder in mine.

Here's a link to the recipe: Triple Dip Seasoned Breading
