its about $1700+ more for the hpdiamonds, and I essentially would go down two colors from the E Color Fourmine to the G color at hpdiamonds

HPD diamonds are superideals; the cut is superior. These two diamonds will out-perform any XXX GIA diamond, every day of the week.
If you can make your budget work, HPD is my recommendation.
 
The both CBI diamonds have superior proportions, and you're paying premium for that.

The Four Mine one is very well cut with great optical symmetry and it's within the AGS ideal range, but I would've preferred the crown of 34.5 combined with 40.8 instead of 40.6 pavillion. It's still a beautiful diamond, just not as perfect as HPs. If you're under a budget, then it's a great choice for the specs, but if you want nothing but best, then you should go with one of the super-ideals.
 
For both the price and color, I would choose the Fourmine diamond. $1700 more for 2 color grades lower is a tough sell, even for a CBI.

Now, if it was a choice between those CBIs and a poorly cut diamond (borderline GIA EX "steep-deep"), then yes, I would choose the CBIs in a heartbeat. But, as mentioned by @blueMA, the Fourmine diamond is very well cut.

I know everyone always talks about how a well-cut diamond appears X color grades whiter, and that may be true from the face-up position. But I'm sorry, a G will not look like an E, especially from the side profile. It just won't. You've already mentioned that you're color-sensitive (it's OK to admit that, don't feel scared of being belittled here on the forums for it :) ), and that your friend's H looked "off" to you. If this is the case, I would definitely stick with a D-E color as you originally intended.
 
I'm trying to search for more diamond options on Four Mine using the proportions suggested by @rockysalamander but it doesn't seem to allow results to be filtered by pavillion and crown

there is an advanced search box called L/W Ratio?

Is there some sort of trick to filter results by crown and pavillion - @blueMA @Matthews1127 ?

I think I've narrowed down what I would like to the following:

Carats: 1.00+
Clarity: VS2
Color: E/F
Budget: 8-10K
 
Checkout rarecarats.com - They allow for crown/pavilion search by multiple vendors, but the search result don't always seem to be exhaustive. Other than that, you just have to go by the photos/videos and then individual certs.

This is a great recommendation; I have not found any other way of searching for CA, PA, C%, and P%. That info should be included on the certification.

I think fourmine provides ASET and H&A images. Yay.

I can't see the details on #3 (looks like the number of the stone is too short), but both #1 and 2 are worth an ASET. Its nice to have several to choose from.
 
H&A images look great to me! Hearts are slightly clefted, but that won't impact IRL performance. The girdle is well-done (neither dug nor painted), so the light performance and scintillation should be excellent. I would recommend pulling the trigger on this 1.07 if it checks all of your boxes, but I would still want at least an IS image once they procure the diamond to confirm that there isn't any leakage under the table (which is about the only thing that an IS image will tell you that an H&A image cannot).

It's well cut, but I don't like the black crystal right under the table in this one. It's fairly obvious in the video, so I feel like that might be noticeable upon close inspection.
 
Out of the three new ones you posted, I like the 1.02 E/VS2 for the cut, color and price. I would ask if they have images for that one available.

@AC76 . All three of the options in post #43 are good options. The first two are pushing depth a bit, but if they can defend that with a good ASET, they are nice. Of those three, I like 2826970222.

I'm in love with this...yellow flour and great angles if the JA gemologist clears the clouds.
