I have seen a lot of AGS diamonds that are rated Ideal for Polish and Symmetry, but when it comes to GIA grading I have not found anything above Excellent. Does GIA use Ideal to rate Polish and Symmetry?
AGS and GIA both use different terms in grading symmetry and polish. The AGS top grade is Ideal and the next down is Excellent. GIA's top grade is Excellent and the next down is very good. A GIA Excellent/Excellent may not meet the AGS standard of Ideal. The reverse is probably also true.
