How do you work out depth and table as a percentage?

Is it simply just measuring it?

The biggest dimension a round diamond has is the diameter at the girdle. The table and depth are less than this and are expressed as a per cent of the girdle diameter.

For example, if a diamond is 10mm across the girdle, the table would be around 6mm and the depth close to 6mm as well. In this case the depth and table would each be 6mm/10mm = .60 or 60%.
 
Yeah... it's just a measurement. But... you may want to look down this LINK for some detail on where those numbers come from.
