Diamond cut to specifications???

I have been looking for a well cut pear shaped diamond, thus far having no luck. They all seem to have shallow crowns and deep pavilions making them dull with a bowtie. One place I went to suggested that his jeweler could cut a pear diamond to my exact specifications, i.e. pavilion/crown %s table % cts the whole ball of wax. My questions are
1) Does anyone have any experiance with this and could let me know if it is a good idea??
2) If I did do this what specifications should I use? AGA's 1A?

Please help????
