Can someone tell me what the "ideal" depth of a stone should be? Specifically for a princess cut.

There is none. You just want to be smart about it. If it's too deep, you're losing size. If it's too shallow it could make for a dud.

I aimed for around 70 ideally but set my cutoff at 75

no coincidence that the AGA cut chart's 1A grade depth ends at 75
