We use upturned glasses in my house !
We have "cookie cutters" to do that job. A cookie press is another thing altogether!

I think graham crackers are similar to your digestive biscuits, but not as sturdy. We have a cracker here (we call "biscuits" either "crackers" if they are savory, or "cookies" if they are sweet) called a Carr's wheatmeal biscuit. I absolutely love it. It is not light like a graham cracker, but is similar.

Missy, love all of your recipes and will be making the raspberry almond ones. I have been making cookies all week and although tasty none are beautiful. Just packed up my last cookie tin and sent off to neighbors... a bit early but thought everyone needed a little jumpstart to the season of giving.
What exactly do those plain biscuits taste like ?

I made oatmeal scotchies. They look hideous because oatmeal cookies are not exactly attractive, but they taste fine!
These are a selection of last year's butter cookies. You can tell that I quickly ended up simplifying the designs down to churn them outI used edible glittery sugar to jazz them up. You can't really see it in the pictures but it makes for the prettiest sparkly cookies.
I guess I didn't take any pics of the red velvet balls with cream cheese frosting, the grown up spiced dip cookies or good old Christmas crack.
*I also haven't bothered to start making any this year.*

Not cookies, but I did my first run trying cinnamon rolls from scratch. Only had bread flour lol (forgot again) and DH used all the cinnamon in his festive drinks since Halloween, so I used cardamom (which I find is a super versatile spice).
Rolled too wide:

DH says they are amazing
My kids like to eat breakfast foods on thanksgiving and Christmas morning since we eat around 3.
I usually make a breakfast casserole so I’ll add this to the menu. The cardamom made a nice flavor.

Do you think they freeze?
They made a lot for two people and they might be nice for New Year's day breakfast
How much sugar do you think i could cut down on and they would still taste good ?
Yea, I do think they will freeze well. I would make the coffee Icing included in the dough recipe rather than the cream cheese icing if you wanted to cut sugar. The dough itself had a great flavor.
Drizzle the icing instead of slathering it on like I did lol

It is caramel/chocolate layered onto saltines or graham crackers. Ridiculously simple to make and it is so good.What is Christmas crack?
