Today I made a quick trip to the grocery store for some obvious baking ingredients (eggs, butter, flour, etc.)
As the girl (teenager) was bagging my groceries she asked "what are you baking?"
I replied "carrot cupcakes with cream cheese frosting"
With a puzzled look on her face, she said "you're baking a cake with broccoli?"
With a puzzled look on my face, I replied "no...?" and left with my bags.

Apparently she had misheard me...I was just as confused as she was.

The cupcakes turned out ok. I used a recipe I haven't used before and I'm not sure I'll use it again. I normally use a different recipe for carrot cake that is much better...but I have never tried it as cupcakes before and didn't want to have a disaster on my hands.
And of course the cream cheese frosting is delicious. How could it not be?!

Update: we ate the cupcakes for dessert tonight and they were pretty darn good! I had not tried one last night, but thought the texture may have been funky. The cream cheese frosting perfectly accented the cupcake, which was not overly sweet on it's own.

This was a bad thread to read while suffering pregnancy insomnia...between the pie, cake,and carrot cake cupcakes, im now unable to sleep and in need of some baked goods....
