Changing Face in a Rolex Oyster?

I have a Rolex Oyster Perpetual that I was given by my parents when I finished grad school over 20 years ago - still love the watch and it will be the only watch I will ever own for sentimental reasons - but about every 7 years or so I have changed the face out to just change it up a bit - any ideas on where I could get some decent pricing on my next face change? It is a stainless - and thinking this time I want to dress it down a little and go with one of the nice blue faces they have - I also hear - that if you change the face out - you can not keep your old face - but they require the jeweler to keep it for forgery reasons - is that also true?
 
where did you have the face changed previously? did you ask about the requirements for replacing it?
