My breakfast comes in a bottle, heh heh. No seriously, I can't eat in the morning at all. I drink Glucerna. We only make a real breakfast at Christmas. :bigsmile:
 
That does sound good Karl...sometimes breakfast recipes seems more like dessert! Yum!

My family likes breakfast food for dinner. There is a simple egg casserole I make with biscuits on the bottom, crumbled bacon, eggs and cheese.
Cooks for about 30 minutes...serve it with hashbrowns. They also like breakfast rollups which is basically the same (scrambled eggs, bacon, cheese
and hashbrowns) all rolled up in a wrap. So simple to make and works great for when you forgot to thaw out anything for dinner.

Duck confit breakfast hash. Buttermilk banana or apple pancakes. Scones.

Easier than you think!

Breakfast at the weekend: there's a home-made quiche hidden behind the Japanese salad dressing bottle (not on purpose, lol), home-made pancakes, home-made low sugar strawberry jam, salad containing baked sweet potatoes, low-salt lean bacon, organic eggs (not shown), hibiscus tea, artisan yoghurt, decaf cappuccino (not shown), fruit...

Or a more "simple" affair - Vietnamese beef pho which is a traditional Vietnamese breafkast (actually nothing simple about it, lol):

@Phoenix , thanks for the pictures...now I am feeling very hungry!!! :lol: I love pho but I suspect the broth probably takes a long time to prep!

I am not a morning person, so I make a bunch of chia seed puddings overnight, toss in some blueberries / strawberries in the morning and we are good to go!

The broth takes several hours to make. It really is a labour of love. It's totally worth it though.

@Phoenix , chia seed is a superfood that has a bunch of great things: omega-3 fatty acids, carbs, protein, fiber, antioxidants, and calcium.

Chia seed pudding recipes at its core are chia seeds, mixed with almond milk ( or other types of milk depending on your preference). The chia seed is left to soak up the milk overnight, and it becomes pudding like the next day. Toss in fruits and voila, done!

There are different variants and recipes (e.g. honey, cocoa powder etc ala Wellness Mama, whose pics of the puddings are below). It's healthy, tasty and it takes all of 1 minute to prep, so I am loving this!

@Alexiszoe , I was aware of chia seeds and their health benefits, but didn't know one could make puddings from them. Look yummy!!:love: I love almond milk too. Will def give this a try.

I was actually useless at cooking growing up in a family of amazing cooks (my mother and 2 of the 3 sisters); and as the youngest daughter, was never allowed into the kitchen. I never knew how to cook anything (well, except instant noodles, hehe, the staple of many Asian students) until well into my late 20's. I went to Hong Kong for a secondment and suddenly found myself without family and had to learn to fend for myself. I also love food (can you tell? hehe) and have learned over the years that in order to eat the dishes I adore any time I want, I needed to learn to make them myself.

Sure Alexiszoe, its embarrassing easy:oops:. I got it off pinterest. I use crumbled bacon instead of sausage because thats what my family prefers.

How do you prepare all of these fancy foods? I have to wake up four hours early just to have the ability to face the idea of the shower.
 
I only eat breakfast on weekends, and then it's basically brunch because I've never really been a breakfast eater. I never wake up hungry.
My go-to is granola with fresh sliced strawberries and blueberries mixed in (sometimes chocolate chips and raisins!) drizzled with honey. Glass of almond milk.

Alexiszoe--I am lazy and buy premade chia fruit "gels." I buy chia seeds in bulk all the time and I never remember to do anything with them. Sometimes I mix them into juice but I rarely remember to. I need to get better about that! Your puddings look good!

we do breakfast for supper much much more often than we do a fancy breakfast in the morning.
 
I don't eat much on weekday mornings...a couple of hard boiled egg whites (the dog gets the yolks!) and a piece of fruit. My kids however, eat like royalty every day with an assortment of homemade waffles, pancakes, French toast, muffins, etc. I tend to make huge batches of these items and freeze them in serving sized portions so all I have to do is thaw/reheat in the morning. On weekends, I'll do crepes, bacon, etc. We also do breakfast for dinner because it's just so yummy!

Breakfast for me is steel-cut oats, organic soy milk, walnuts, ground flax seeds and cinnamon.
Sometimes, if I'm feeling decadent, a teaspoon of dried cranberries which are made with a smidge of cane sugar. :shhh:

For the most part I've given up on food-as-endorphins years ago.
It took years, but finally I don't miss my addiction to unhealthy foods as drugs.
I'm like the Amish, without the religion.

That's impressive Kenny. I'm not quite that evolved and can't quite convince myself to give up sugar (I have a terrible sweet tooth!)...

I must say that I don't eat what I've posted above for breakfast on a regular basis. The elaborate b/fast is only for the weekend, and then only once or twice a month. Most of the time, my b/fast consists of a slice of wholegrain toast with peanut butter, 2 egg whites, 1-2 (portions of) fruits, 1 cup of milo with earl grey tea and 1 decaf cappuccino. I'm trying to substitute toast with oatmeal porridge but find it hard to eat - perhaps in cold weather I'll go for the oatmeal.
 
Kenny you have good breakfast taste! The steel cut oats sound delicious. My usual breakfast is coffee with cream and two hard boiled eggs, of which the pugs get a half yolk each. I eat that at work around 4-5 hours after waking up. I’ve found that high carb in the mornings just makes me starving hungry by midday.

@Phoenix , it's amazing what studying / working overseas can change us so much! I admire your dedication to learning to cook so you get to eat the food that you want. Hong Kong has some amazing food (and jewelry!) but the taste can be rather bland sometimes so cooking is probably the best way to get what you love!

@monarch64 , thanks for the tip on the chia fruit "gels", and mixing it with pre-cut fruits. For someone who's not keen on cooking / prepping this is a godsend!

@tyty333 , thanks for sharing the recipe! I just made it today with bacon AND sausage and it was polished off within minutes!

I'm so glad that your family enjoyed it Alexiszoe! Just so easy to fix and kid friendly IMO.

Bacon and sausage...I'll have to try that one! I was just thinking of a Mexican version by using taco cheese and adding some drained rotel tomatoes.
I'll let you know how that one goes over with the family...it will be a while though before I make it because I just made it the other day.

Why is everyone talking about grains? I would kill for steel cut oats! There is a box on my shelf. It calls my name whenever I open that particular cabinet. And the corn meal and corn combinations I have been experimenting with have been lush. These appeal to me more than bananas and sugar!
 
If you might call oatmeal/water/salt a breakfast, this is mine. I need coffee - as good as it gets, as a Turkish brew, potentially with cardamon involved.
