Anyone have a recipe for hummus?

I have a flour mill (the Wondermill) that can also mill whole dried chickpeas, aka garbanzo beans, into flour for hummus.

I wanna try making hummus at home ... cheaper, fresher, and probably greener and healthier.
Of course, there are many recipes online, but I always prefer to start with a personal recommendation.

I may be incorrect, but I've never heard of using chickpea flour to make hummus. Even if you start with dried chickpeas they are normally cooked and then thrown in a food processor. I think chickpea flour would be a completely different consistency! You'll have to report back when you try it out.

After spending all that I want to explore its many uses.

I just milled some whole dried rosemary into ground rosemary and it worked wonderfully (pun alert)

A quick google search does produce some recipes, but with pretty lame reviews. However it looks like it's a common sub in gluten free items.
"Chickpea flour becomes tacky and stickier than AP flour when hydrated, and it gives fritters, crackers, muffins and other baked goods structure while allowing for an airy texture."

I have never ever heard of using chick pea flour to make hummus.

You can soak dried chickpeas overnight, cook them, and do this same thing, but I have discovered that canned chickpeas work just as well. And with the canned, you can whip up a fabulous bowl of fresh hummus in a matter of minutes

I do this in a blender, but I guess you can use a food processor.

I can chickpeas, drained. (Reserve liquid.)
1/4 cup tahini
1/4 cup plain yogurt
1/2 teaspoon salt
3 TB lemon juice
2 cloves garlic
pinch of cayenne
3 TB extra virgin olive oil

Place all in the blender. Add some of the reserved chick pea liquid, and more lemon, olive oil and yogurt as needed to create a smooth consistency that is to your liking.

Put into a bowl and top with more oil, cayenne and Za'atar, or sumac.

I've always made it with canned and removed all of the shells first.

I too have not come across hummus being made using chickpea flours. :confused:

I used to soak and cook chickpeas myself, then drain and purée them. However, it is such a faff I decided to use tinned cooked chickpeas in water instead.

I make mine in a food processor.

Drain 4 tins of 400g chickpeas (drained weight 240g approx.) and save the water.
Add sufficient peeled garlic to taste (I would use at least 4 large cloves).
Add the juice of at least 2 Limes or 4 Lemons to taste or a mixture of both.
Chop and mix the above into a rough paste.
With the motor running, add Light Olive Oil until a smoother paste is formed.
Add some chickpea water to the paste and continue to blend to the desired consistency.
Add Cayenne Pepper to taste.
Add Salt and freshly ground Pepper to Taste.

When transferred into a suitable tub, I like to dust some Cayenne Pepper on the top to make it look nicer.

Our basic version:

1 can chickpeas
1/2 c tahini
1/2 c water
Juice from a lemon (or two..)
Around 1 tsp salt

Food processor until smooth

I eyeball everything....lol
4 cups of chickpeas, cooked from frozen (I don't like canned sorry guys) Reserve 1 cup of chickpea juice.
extra virgin olive oil (I put in enough to help loosen the chickpeas)
4-5 cloves garlic (or more depending) minced
1.5 teaspoon cumin
2 lemons
tahini( I never know how much, I put it in to taste)

grind up the chickpeas in food processor, adding EVOO and water as needed until smooth.
add everything else.

Today I bought hulled sesame seeds in bulk at Winco to make tahini, apparently an important ingredient of most hummus recipes.

Every time I see the title of this thread I want to eat hummus and it is one of those foods I do not trust myself with. I get this way in grocery stores, too. I pretty much eat an Atkins diet. I could eat some hummus. I do eat chick peas if they are in a salad. But I love them and if I started to eat hummus as dip, I wouldn't stop. I have never made it. I had no idea how one made it until I read this thread. I knew it came from chick peas, but I was ready to believe that kenny's chick pea flour was an acceptable way to prepare it. :))

There's a big company called Bob's Red Mill.
They sell chickpea flour with a hummus recipe on the back.
So making via the flour is not unheard of.
It's just much cheaper to mill your own flour from dried beans.

Eventually I'll try making hummus many ways.
One hummus ingredient usually called for is tahini, quite expensive in stores yet reportedly more delicious when home made.
It looks simple to make and I'm looking forward to trying all the variatios in this link:


Next I bought an eggplant to make baba ganoush.
It'a a take off on hummus and so yummy at our favorite restaurant!

It's exotic, but I'm so glad i bought that mill.
It opens up opportunities for many very healthy and cheap cuisine.

There are lots of good pita bread recipes out there. I'm sure you will find one you like and then you will be hooked on home made whole wheat pita.
You could try making naan, too........................
