Well I think I found a great diamond from JamesAllen but I cannot find a setting I like...I want a cathedral setting but they don''t seem to have one that isn''t crazy thick or have shoulders that dive down instead elegantly floating up to present the diamond. I also like it when the diamond sits high up...

I recommend looking at Pearlmans Jewelers, they have a ton of designer settings. There are many on here that have bought a diamond somewhere else and the setting from another jeweler. If you would rather shop around locally, you can do that as well, but just take note that they could charge you quite a bit to set your stone. You could also try adwar.com or uniquesettings.com and see if James Allen will order it in for you.

ETA: those settings that you have included, are pretty standard settings that could be ordered from a casting house like adwar.com or stuller.com it shouldn't be a problem for most jeweler to order them in for you- so I recommend you talk to James Allen if you like those settings and tell them your' concerns.
 
My diamond came from Whiteflash. My local jeweler ordered a tapered cathedral setting very similar to the ones you posted from their Roseco catalog and set teh stone for me.
