When bringing a stone to a jeweler to have it set into a ring...

First question I have is what does it typically cost to set a single center stone (1.5 ct Princess Cut).

Second, I suppose the only way to really be certain they don''t switch the stone is to stand over their shoulder while they do it. Should I really be THAT paranoid? If so, what''s the best way to go about having the stone set and minimzing the risk?

it depends on the jeweler.
it could be anywhere from $100-$300 or more

no..you should not be that paranoid. any reputable jeweler would not put his entire business at stake to switch a diamond.
you can get to know the inclusions of your diamond before taking it in and then use them to confirm it when you pick it up.
the jeweler should offer to help with this.
 
Also, if your stone is laser inscribed on the girdle, ask them to read the inscription number to you and make sure it matches your grading report.
