Okay, I know we''ve done this thread before, but A) I love it, and B) I just had a phenomenal dinner thanks to Haven''s barbecue chicken recipe and LaurenthePartier''s sweet potato fries recipe, so thanks to both of you! So what''d everyone else have?

I know there''s a Monical''s Pizza in Kankakee, if you feel like thin thin thin pizza. I recommend the veggie or the deluxe.
 
Mmmm. I made crepes. I''ve been craving them for weeks. So easy. I just squeeze a little fresh lemon juice over each one and dust it with sugar. Roll it up and eat them standing up in the kitchen.

I''m still hungry though. Should have made a bigger batch......
 
I had chicken hash. It was yummy!
 
Meatloaf, green beans and mini baked potatoes. Now pina colada sorbet for dessert.

I can be a terrible snacker though. Most of my roommates celebrate Easter and got everyone candy... it mocked me.

now off to make some chicken... maybe a quick stir fry?

Found a brew pub restaurant! Had pecan crusted chicken with a rum sauce of sorts, steemed veggies, and sweet potatoes. YUM.
 
Tofu stir fry over brown rice! Made with Extra Firm tofu, tons of veggies, and Trader Joe''s Soyaki sauce. YUM!

That sounds a lot like what I made earlier this week! Yummy!

Unfortunately I ae the last of it yesterday, and I this was a late work/after work things to do night, so tonight''s dinner was...

a panda bowl of steamed veggies and black pepper chicken. Not bad for fast food...

We worked late and DH had to fix my computer so we picked up FF tacos on the way home.

Last night we got take out from an Asian restaurant. I had sushi and brown rice and my husband has beef pad thai. I''m not sure what we''ll have tonight -- maybe pasta and vodka sauce.
 
We ordered pizza. Because we''re lame.

DH sat in tons of traffic, and I''d had a very stressful time with the bunnies, so we couldn''t deal with cooking dinner at 8pm.

The pizza was delicious though!

They make one with mozzarella and ricotta - it''s kind of expensive for a pizza for whatever reason, but so good!

I just made chicken wraps with caramelized onions, avocado, tomato and diced red onion last night. Hubby made his amazing guacamole!

I think I'm making Pesto Baked Pork Chops tonight or Moroccan Lamb. I'll post the recipes because I really like them both. :)

Ingredients:

For the pork chops:


1 lb. pork tenderloin, sliced into 1 chops
1 recipe for pesto
olive oil
salt and ground pepper to taste

For the Creamy Mashed Potatoes with Chives:
2 lb. potatoes, cleaned and chopped into 1 pieces
2 Tbsp. butter
cream or milk
salt and pepper
good bunch of chives, chopped

Directions:

Move the top rack of your oven to the top 1/3 of your oven.


Preheat your oven to 350 degrees F.


Bring a large pot containing the potatoes, water, and some salt to a boil. Boil until tender, about 10 minutes depending on how thick your slices are. Drain and set aside until you are ready to mash them.


Season your pork loin chops with salt and pepper and drizzle with a bit of olive oil. In an oven safe dish, lay out your pork chops and spread with a nice layer of pesto. Donft be afraid to go heavy on the pesto. Itfs worth it.


Bake, uncovered on the top rack for 30-45 minutes. I like my pork a bit closer to medium, but only bake until their internal temperature reaches 140-145 degrees F. Feel free to bake to 160 degrees if you prefer the texture of shoe soles.


Meanwhile, mash the potatoes with a potato masher, and add your butter, milk or cream, salt and pepper to taste. Add a good bunch of chopped chives into the potatoes and mash until creamy, adding more milk or cream as necessary.

Plate a large spoonful of the potatoes in the center of your dish. Add 1 or 2 chops to the plate, and top with sauteed spinach.

  • 1 medium red onion
  • 3 ripe tomatoes
  • a small bunch of fresh parsley
  • 1 fresh red chilli
  • 12-14 dates
  • ground cumin
  • a small handful of pine nuts
  • 1 tin (15 oz.) of chickpeas
  • 1 1/2 cups couscous
  • 1 lemon
  • 1 Tbsp balsamic vinegar
  • 1/2 lb. lamb leg steak
  • natural yoghurt or sour cream to serve


    Directions:


    Peel and finely chop the onion and chop the tomatoes into chunks. Roughly chop the parsley and stalks, finely chop the chilli. Finely slice the dates.


    Put the pan on a high heat and add a lug of olive oil. Add onions, chilli, dates and cook until onions soften slightly. Add 2 tsp of cumin, pinch of salt and pepper and the pine nuts and stir.


    Add tomatoes, most of the parsley and the chickpeas with all the juices and an extra 1/2 cup of water. Leave the sauce to bubble away for about 5 mins.


    While the sauce is simmering, put the couscous into a bowl and pour in just enough boiling water to cover. Add a pinch of salt and pepper, a good squeeze of lemon and a drizzle of olive oil, then cover with foil and leave for 5 to 8 mins.


    Returning to the sauce and use a spoon to mash it up a bit. When it looks quite saucy add a pinch more salt and pepper and the balsamic vinegar.


    Put a second pan on a high heat and let it get really hot.


    Cut the lamb into 1 inch pieces. Sprinkle chopping board with cumin and salt and pepper.


    Move the meat around the board to coat it in the seasoning. Push the meat down with hands to flatten the pieces.


    Add a few lugs of olive oil and lamb to hot pan. Cook for about 2 to 3 mins on each side.Uncover the cous cous, fluff it up a bit with a fork and put onto plates

    Put a few lamb pieces next to it with a nice amount of sauce.

    Sprinkle with remaining parsley, a dollop of yoghurt or sour cream, a drizzle of olive oil and any meat juices from the pan.

I went foraging on the web looking for a recipe for baked sweet potato fries because I really don''t like frying stuff, and it took me a good bit to realize I had accidentally found your blog, haha! BTW, totally highjacked your brownie recipe, too!

I actually have a slab of pork in the fridge right now that I really had no plans for, so I just may wind up stealing this one as well! Otherwise, it''ll be cubed steaks with bell peppers and tomato, possibly scalloped potatoes, and a bucket of salad. I''m craving salads these days!

I actually skipped dinner last night. I had my niece, nephew, and little cousin over for a sleepover and just plain forgot to eat amidst all the fray.

We''re eating flank steak, baked potatoes, and steamed veggies tonight.

last night i made my version of ''carbonara''. To be honest though its nothing like real carbonara. I use real cream, pancetta and cilantro (accidentally picked it up once instead of flat leaf parsely but it goes fantastically!)...

so tonight its left over carbonara

About the bacon brownies - when in doubt, add more bacon! One of our fellow PSers gave the recipe to a bacon-loving friend of hers and she made them for a movie night. She emailed me to tell me that Penn Jillette declared they were the best thing he''d eaten all year. Totally made my day. My week. And my month.

We''re having baked salmon and pasta with parmesan cheese for dinner tonight. I bought an apple bourbon pork tenderloin today and I think we''ll either have that for dinner tomorrow or on Sunday.
 
I didn''t cook it, but I had THE BEST dinner tonight! I had pan seared shad roe with spicy greens and balsamic infused pici pasta with poached egg and pancetta. ZOMG I wish I could eat it again right now!
