what is your favorite form of potato?

(1) Mashed (2) Extra crispy home fries with tons of sautéed onions and green peppers.
 
I love 'em all but I think I'll say twice baked. It's the perfect combination of baked and mashed.

I'm Scotch-Irish to my very core. I've never met a potato I didn't like.

Red potatoes, with a bit of butter and chives, are the bomb.

A perfectly baked spud, with a modicum of butter, sour cream, cheese and chives, and a sprinkle of pepper . . . mmm mmm mmm.

When it is hot and fresh (and the kitchen has gifted you with a big helping), the hash brown casserole at Cracker Barrel is yummy and cheesy and oh-so-bad for you.

My mother's scalloped potatoes were simple and perfect. She never used a recipe, and she is gone. So, sadly, are her scalloped potatoes.

Mashed are good - - if the right amount of butter and milk are used. Great mashed taters don't need garlic, cheese, or anything else.

I'm not really a chip eater, but there is a reason Lay's are not allowed in my pantry. Once open, they would be scarfed.

my favorite would most definitely be mashed though. good mashed potatoes, mashed potatoes from the box, I don't care :D
also love any combination with garlic, olive oil, cheese, spices...potatoes in soup, potatoes in curry, baked, fried, mmmmm
 
I love ANYTHING with potatoes! :) All of what you guys have mentioned but will add one yummy version : indian samosa with potato filling. YUMMMMMMM!

Holy cow, this is such a blast from the past for me! We had Boardwalk Fries out here (Chicago) when I was young and my mother LOVED them. They all disappeared at some point, but I haven't thought about them in years. They were yummy, I remember they were clearly made from real potatoes because some had the skins on 'em. Mmmmmm.

I used to eat these when I was a latchkey kid who wasn't allowed to use the stove so I had to make dinner in the microwave. I hadn't had them in years, but then this past May I had a real pregnancy craving for some boxed mashed potatoes! DH was so grossed out by the prospect, but I bought them and made a bowl, and I just couldn't stomach it. Totally ruined a delicious childhood memory!

I DO eat new potatoes from a can when I'm feeling all nostalgic about my sleepover camp days. They served us herbed new potatoes every Shabbat, and for years I could not find new potatoes that had that *taste* of camp. Then, DH's cousin hosted a holiday dinner and used canned potatoes (which I didn't even know existed) and there it was! THAT was the flavor I'd been missing! :cheeky: DH thinks these are the grossest things I eat, but I do love them every now and then. Sleepover camp gave me a taste for canned potatoes and cheap Manischewitz wine!
 
Scalloped potatoes. Love them.

Neither had I until I saw them on DH's cousin's counter!
I remember spending many childhood years wondering how long it took the cooks in the camp kitchen to peel all of those little new potatoes so perfectly, though. It took a couple decades, but I finally got my answer--there was no peeling going on at all!

Man, this thread is dangerous. I'm almost willing to drive 25 minutes north just to get my favorite cheese fries right now. *almost*

My husband has the palate of a 5 year old. I asked him what his favorite kind of potato is and he said tater tots. Guess what we're having for dinner tonight?

I don't like the "russet" powdery type that you mash. I like the small chewier varieties, like the baby rose potatoes, or yukon gold. I parboil with skin on, then toss in some olive oil, sea salt and roast.

One of my friends makes an amazing cilantro potato (using 1 pound baby potatoes). She purees one bunch cilantro, half a cup of olive oil, half a cup of water, salt and pepper to taste. Cooks the potatoes in this puree mixture until the whole puree dries up, and the oil crisps the potato skin leaving the cilantro and everything stuck on the potato. Just thinking about it makes me drool.

That sounds yummy, JM - are these cooked on the stovetop, or in the oven?

I realized that I forgot to mention the garlic fries at a local establishment called Jack's Urban Eats. They are definitely one of my dietary downfall! One of Jack's specialties is made-to-order tossed salad - you get to choose the greens, six toppings, and the dressing, and it's tossed right in front of you. Sounds wonderfully healthy, right? Unfortunately, I usually succumb to an order of garlic fries to go with that salad. Homemade french fries topped with minced garlic lightly sauteed in something oily, topped with a bit of grated cheese - I think. Yum yum!!!!!

BTW nobody, but NOBODY makes French fries as good as my mother's! She deep-fries the potatoes twice so they're crispy and golden on the outside but fluffy on the inside. She's from Holland, where they take their potatoes seriously!

If you've ever eaten at Sonic, you know they tator tot EVERYTHING! I make a baked version of their super sonic breakfast burrito and use tator tots, eggs, onions, tomatoes and jalapenos...sooo good!

But I like ALL potatoes! Hmm..now I want some starch in my life lol
