I have learned, way too late in life, to make the foods I only adore as well as the foods the others like. I am happy, so very happy, eating my rutabaga and mom’s special, Christmas jello mold. (Now I see others chomping on my faves too and I do not say a word.) So please throw a few parsnips in your oven while you are cooking other things. Treat yourself!

as a matter of fact i just ordered a bag with the groceries this week

i will peel and freeze them dripping wet and unbaged to try to mimic the effects of a frost on the root still in the ground( to convert the starch to sugar to try to make them sweet like a winter parsnip)
North island parsnips are a poor substitute for the ones grown down home at the best of times
